Easy Poke Cake Recipe

This was inspired by my love of the Peppermint Chocolate Chip milkshake at Chick-fil-a.  I wait all year to get my hands on one of those milkshakes.  They are my absolute favorite!

This is made with the same method as my Butterfinger cake. Bake the cake, poke holes in it, pour a peppermint chocolate mixture all over it, and top it with Andes candy cane crunch and cool whip.  OMG! DELICIOUS!  This is Christmas in a pan! As with the Butterfinger cake, this cake gets better with time.  It is great right out of the pan, but I would suggest making it at least a day in advance of eating.  I must confess that we couldn’t wait a day to sample this.  It was just too dang tempting!

How to Make Chocolate Peppermint Poke Cake

This cake is super easy to make. Start with making a sheet cake with a box of cake mix. Make the batter according to the package directions. While the cake is baking, mix together Eagle Brand milk, hot fudge sauce, and peppermint extract. Take the cake out of the oven. Use a wooden spoon handle or fork and poke holes in the cake. Pour the sweetened condensed milk over the cake and let it cool completely. To finish the cake, sprinkle some Andes peppermint crunch baking bits on top of the cake. Frost the cake with a tub of Cool Whip and sprinkle more peppermint baking bits on top. Store the cake in the refrigerator until ready to serve.

  • You can use any type of chocolate cake mix you prefer. Regular Chocolate, Chocolate Fudge, Devil’s Food, or Triple Chocolate Fudge will work fine.
  • If you can’t find the Andes Peppermint Crunch Baking Bits, you can substitute Ghirardelli Peppermint Chunks Baking Chips or some crushed candy canes and white chocolate chips.
  • How far in advance can you make a poke cake? The cake will keep 3 or 4 days in the refrigerator.
  • Can Poke Cakes be frozen? Yes! You can freeze the cake and thaw it when you are ready to enjoy.

  1. I made this at Christmas for a party. It was so delicious. I looked for Ghiaradelli Peppermint Bark today, but apparently it is a Christmas offering only. Luckily I bought up some Andes Peppermint Crunch Indulgence bars at Christmas because this is going to be a Valentine’s Day dessert

  2. Easy recipe and the results produce a great dessert! I could not find the Andes peppermint chips, so I just crushed some regular peppermint candies. Will certainly use this recipe again!

  3. i made this over christmas (and just made it a second time for a board meeting tonight) with a few changes. my rectangular pan was in use so i used round cake pans. once cooled i layered the cake, cool whip and candies two times in a trifle dish. it was so pretty! this recipe was a hit ~ as are so many of your recipes!

  4. It was as cool as I could get it since i had to get to bed asap. I set the pan out in snow for a few minutes to cool off after it had been sitting out for half an hour after the oven. and it wasnt andres brand peppermint but something very similar.

  5. I sent this cake with my husband to share with his co-workers and it is being devoured. I don't think I will get to try any this time.

  6. Love that you used the Andes candy cane crunch. I just discovered those delicious gems and could not wait to see them used in Christmas goods.

  7. I always LOVE your recipes, and the fact that they are all normal food, with simple ingredients, and they are always delicious! However, after seeing this recipe posted today, I believe that we could be best friends! I LOVE the peppermint milkshake from Chick-fil-a and also wait all year for it to arrive! I have become a lover of all things peppermint during the Christmas season! And I'm sure that I'll love this recipe too!

  8. Yum! This looks delicious. Perfect combo choc/peppermint. I like the Peppermint ice cream that is only available for a short time at this time of year. That might be good with this cake. Hmmmmm? – thinking. Love your background in the pix.
