Pin This RecipeI love the flavor combination of sausage and cream cheese. I am always looking for new ways to incorporate it into my favorite dishes. I tried it in this hashbrown breakfast casserole and the results were AMAZING! OMG! SO good!!!! You can make this casserole ahead of time and refrigerate or freeze for later. You can even split it between to pans and cook one now and save one for later.
This casserole has all of my favorite breakfast foods. Frozen hashbrowns, sausage, cream cheese, eggs and cheddar cheese. I browed the hashbrowns in a large skillet prior to putting them in the casserole. I think it helped get the potatoes fully cooked and crispy.
I used a roll of Jimmy Dean HOT breakfast sausage in this casserole. If you don’t want the casserole to have a little kick, use all regular breakfast sausage instead. I also used regular cream cheese. I think using low-fat cream cheese would be fine, but I would stay away from the fat-free cream cheese in this dish.
As I said, we absolutely LOVED this Sausage & Cream Cheese Hash Brown Breakfast Casserole! It would be great for brunch, potlucks, tailgating, and any upcoming holiday breakfasts! Here are a few of our favorite side dishes from the blog that go great with this casserole:

Do you think you could use Boursin cheese instead of cream cheese? I can’t decide if it would add an extra layer of flavor or end up overshadowing the rest of the ingredients.
You can definitely substitute boursin cheese. You could use half boursin and half cream cheese if you are worried about the bourisn overshadowing the ingredients.
This is a lot for 2 people can I cut ingredients in half?
yes
Do you use 2 8×8 pans when splitting to freeze?
Yes – I split it between two foil pans.
Have you tried a vegetarian version , leaving out the sausage?
I haven’t, but it would be just fine without sausage.
So so so delicious!! I used garlic and onion instead of powder and it turned out amazing. Will definitely be making this again!
Made this on Mother’s Day for a family brunch. It is delicious. I added 1/2 sautéed chopped red onion, 1 sautéed chopped red pepper and 1/2 cup chopped green Chile. It was a hit!
Sounds yummy! SO glad it was a hit, Ann
The instructions say to cook the hash browns til lightly brown… what would happen if you didn’t cook them at all and just put them in the pan frozen? Has anyone tried that way?
I didn’t cook the hash browns, I just defrosted them and threw them in the bottom of the casserole dish. I was in a rush and missed that step. It was absolutely delicious!
You can always put them in the casserole dish and bake at whatever temp instructions state on bag (~10 minutes for me) to brown them and then assemble from there. I’ve done that multiple times with very good results. Or just tossed them in the casserole and go from there if I did not allot enough time — hahaha
Can this be refrigerated for later after cooked? Too much for 2 people at one time.
yes
I make a variation of this recipe—one pound Jimmy Dean sage, on top of the hash browns I mix melted butter and softened cream cheese, sausage on top of that, then eggs and top it with lots of cheddar! I don’t use milk. Been making it for decades, and it’s always a hit!
Can you use hash browns that are not frozen? Like the ones that come in a box?
