Pin This RecipeA few weeks ago I was going through my hundreds of cookbooks in the kitchen and rediscovered my Bisquick cookbook. I started looking through it and found a lot of really good recipes. We loved the Impossible Taco Pie we had for dinner recently, so I wanted to try another recipe from the cookbook. I decided on the chocolate chip cookies. I wanted to see if we could tell a difference from “regular” chocolate chip cookies. At first, I wasn’t sure about the cookies, so I ate another cookie and another and another. I concluded that they were pretty good since I couldn’t stop eating them! Next time I make these I am going to do half chocolate chips and half peanut butter chips. I think that would put these over the top!
Bisquick Chocolate Chip Cookies
Equipment:
Ingredients:
- ½ cup butter softened
- 1 cup brown sugar packed
- 2 tsp vanilla
- 1 egg
- 2¾ cups Bisquick baking mix
- 1 cup semi-sweet chocolate chips (6 oz)
- ½ cup nuts chopped, if desired (optional)
Instructions:
- Heat oven to 375°F.
- In a large bowl, mix butter, sugar, vanilla, and egg. Stir in Bisquick mix, chocolate chips, and nuts.
- Drop dough by rounded teaspoonfuls onto an ungreased cookie sheet, about 2 inches apart; flatten slightly.
- Bake 8-10 minutes or until golden brown. Remove from cookie sheet to cooling rack.

Batter takes great. Watch carefully since a minute too long of baking makes them hard.
Super quick and easy to make!
My family enjoyed these cookies. I added a little more Bisquick then called for just to finish off the box that expires at the end of the month. So compensate, I added some addition fat in the form of refined coconut oil. I also added additional chocolate chips on top and sprinkled lightly after baked with fleur de sel.
These cookies were really good! The only changes I made to the original recipe was adding more chips on top before I baked them for looks and when they came out of the oven, I sprinkled them with Fleur de sel (“flower of salt” in French; French pronunciation: [flœʁ də sɛl]. Very tasty and quick to make!

Can you use gluten free bisquick?
Wouldn’t using a teaspoon make a very tiny cookie???
It is a scoop of cookie dough on a teaspoon, not a measuring spoon. You can use a small cookie scoop as well.
Made these twice. My SIL. Couldn’t get enough of them.
These are cooked and sitting on my counter now. I was wanting to mimic a local bakery and this is pretty darn close. Would like it to taste a little more cookie-y.

Cookies turned out very good. I doubled recipe and used a 1/4 cup to spoon out dough. Also increased the baking time by 2 minutes. Turned out great.
I made these cookies yesterday, they were so delicious. 😋 So easy & with little ingredients. This will be my chocolate chip recipe in the future. I know all my grandkids will love them. I have one vegan niece that I will tell this recipe with gluten free Bisquick. Thank you for sharing.

Oooh-wee! These were great! I only made 1/2 batch, just in case, but later regretted my decision. I'm vegan, so I used ener-g egg replacer, earth balance butter and vegan cc. Yum!

a cookie attack had me scrambling in the cupboard. I had a package of Bisquick buttermilk biscuit mix, the 7.5 oz size…I halved the other ingredients and it was a tad loose using the whole egg. Back to the cupboard..1 scoop of vanilla protein powder did the trick. Now they are even super charged!! And tasty.
