One of my favorite quick side dishes is to open a box of Rice-A-Roni or Pasta-Roni. They taste good and are super easy to make. I saw a version of this recipe floating around on Pinterest and thought it sounded like Pasta Roni.  It had two of our favorite flavors, garlic and parmesan, so I decided to give it a try. OMG – SO delicious and super easy! This is a one-pot dish and it doesn’t require precooking the noodles. They cook right in the pot! Awesome! 

We served the noodles with one of our favorite grilled chicken recipes, Rosemary Ranch Chicken. The noodles tasted great and were almost as easy as opening a box of Pasta-Roni. This will definitely be a regular side dish for us. I am already planning on making these again this coming weekend.

Instructions:

  • In a large pot, heat olive oil over medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Add the butter; cook until melted. Add the salt, pepper and chicken stock.
  • Turn the heat up to high and let come to a boil. Add the pasta and cook for 4-5 minutes. Once pasta is tender, reduce the heat to medium and stir in the parmesan, cream and parsley until cheese is completely melted. Remove from heat and serve immediately.

Notes:

Can use freshly grated parmesan cheese or the green can.

  1. Wow!!! I had my doubts… as I've not done a one-pot noodle dish in this manner that wasn't a casserole.
    This was FANTASTIC! My teenage boy was helping so he would know another easy dish to DIY when out on his own. I rarely buy boxed noodle dishes so this was a welcome treat.
    I doubled the recipe, using a full box of angel hair pasta, boiled for about 8 minutes, and kept the Parmesan amount at 1c per a comment by another here. In hindsight, doubling was unnecessary as we now have lots of leftovers. Served with Parmesan breaded halibut, and roasted Romanesco with garlic & onion. Perfect!
    Thanks a bunch, we will be making this one again…

  2. Ever since they discontinued Pasta-Roni Creamy Garlic (the one with the corkscrew pasta) I have been looking for an alternative. This sounds great and can't wait to try it–using corkscrew pasta of course!

  6. It's hard to think about hot pasta when it's so warm in sunny California, but I think I'll have to make an exception for this one!
