Chicken Legs final meal this week was an easy Parmesan-Ranch Chicken.  We marinated the chicken overnight in ranch dressing and then coated it in a panko breadcrumb mixture.  This chicken was very moist, extremely flavorful and easy to put together.  This falls into our category of quick and easy weeknight meals.  We both thought this was great and can’t wait to eat it again.  I think this would be great to make as chicken fingers and serve over a salad.

Parmesan Ranch Chicken

Parmesan Ranch Chicken – such an easy and delicious weeknight meal! Chicken dipped in Ranch dressing and coated in panko bread crumbs, parmesan cheese, garlic, salt and pepper Baked, not fried! The whole family cleaned their plate! This one is a winner!

ingredients:

  • 2 boneless, skinless chicken breasts
  • 1/2 cup Ranch dressing
  • 1 cup panko bread crumbs
  • 1/3 cup parmesan cheese, grated
  • 1 tsp garlic powder
  • 1 tsp seasoned salt
  • 1/4 tsp pepper
  • cooking spray

instructions:

  1. Preheat oven to 425ºF.
  2. Pound chicken breasts to an even thickness.  Combine bread crumbs, parmesan, garlic powder, seasoned salt and pepper on plate.  
  3. Dip chicken in ranch (or marinate over night) and then coat in bread crumbs.  Place on baking sheet.  Sprinkle with additional parmesan cheese (if desired) and spray with cooking spray.
  4. Bake for 20-25 minutes.
