Homemade Chick-fil-A Chicken Tortilla Soup

This Slow Cooker Chicken Taco Soup reminded me a lot of Chick-fil-A’s chicken tortilla soup, which is my favorite. I wait patiently every year for them to add it to the menu. I am SO excited to have a copycat recipe and be able to eat this soup anytime I want! This is super simple and tastes great! We ate this for dinner and lunch for the rest of the week. It tastes just as good, if not better, reheated.

How to Make Chicken Taco Soup

As I said, this soup is super easy to make. Simply place boneless skinless chicken breast in the bottom of the slow cooker. Add black beans, corn, Rotel tomatoes, chicken broth, navy beans, taco seasoning, corn, and cream of chicken soup. Cover and cook on LOW. Shred the chicken with two forks and serve.

  • You can use any cut of boneless chicken you prefer – breasts, tenders, or thighs.

  • Can Chicken Taco Soup be frozen? Yes! You can freeze all the ingredients in a freezer ziplock bag before making it for a quick freezer meal, or you can make it and freeze the leftovers. Either way it is a hearty and delicious meal!
  • If you make a freezer meal with the ingredients you don’t need to thaw the bag before cooking. You can place the contents of the freezer bag in the crockpot and cook.
  • To reheat leftovers after freezing, thaw completely and warm up in the microwave or on the stove.

Ingredients:

  • 2 or 3 boneless chicken breasts
  • 1 (1-oz) packet taco seasoning
  • 1 (10.75-oz) can cream of chicken soup
  • 1 (15-oz) can navy beans, rinsed and drained
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (10-oz) can Rotel diced tomatoes & green chiles – undrained
  • 1 (11-oz) can Mexicorn, drained
  • 1 (14.5-oz) can chicken broth

Instructions:

  • Combine all ingredients in slow cooker. Cook on LOW 6-8 hours (can cook longer if necessary). Remove chicken from slow cooker and chop. Add chicken back to slow cooker and serve.
  • Freezer meal: place all ingredients in a ziplock freezer bag. When ready to cook, place contents of the bag in the slow cooker and cook on LOW for 8-10 hours. Remove chicken from slow cooker and chop. Add chicken back to slow cooker and serve.
