This Slow Cooker Low Carb Chicken Spinach & Artichoke Soup is AH-MAZ-ING! Creamy, cheesy soup loaded with chicken, spinach, artichokes, and mushrooms. Not only does this soup tastes great, but it is also super easy to make in the slow cooker. Anyone else LOVE easy slow cooker meals like this? I love dumping everything into the slow cooker in the morning and coming home to dinner. Serve the soup with some low-carb biscuits or cornbread and you are set!
How to Make Slow Cooker Low-Carb Chicken Spinach & Artichoke Soup
As I said, this Slow Cooker Low Carb Chicken Spinach & Artichoke Soup is SUPER easy to make. Place some boneless, skinless chicken breasts in the slow cooker. Add some thawed frozen spinach, chopped artichokes, sliced fresh mushrooms, chicken broth, Italian dressing mix, and cream cheese. Let the soup cook on LOW all day. Take the chicken out of the crockpot and shred it with two forks. Place it back in the crockpot and serve.
- I used a Hamilton Beach 6-qt Slow Cooker to make the soup.
- Make sure to thoroughly squeeze thawed spinach. You want to get as much of the liquid out as possible.
- I finely chopped the artichoke hearts. Feel free to leave them chunkier if you prefer.
- I prefer to use Philadelphia brand cream cheese.
- Can use reduced-fat cream cheese.
- If you are having trouble getting the cream cheese incorporated into the soup, try using a whisk to stir it in the soup.
- Can omit the chicken and use vegetable broth to make this vegetarian.
- Can add bacon to the soup – YUM!
- Top the soup with your favorite cheese.

Slow Cooker Low-Carb Chicken Spinach & Artichoke Soup
Equipment:
Ingredients:
- 2 lb boneless skinless chicken breasts
- 2 (8-oz) packages cream cheese
- 1 (0.7-oz) package Italian Dressing Mix
- 1 (10 to 12-oz) package frozen spinach thawed and drained
- 1 (13.75-oz) can quartered artichoke hearts, drained and chopped
- 12- oz sliced fresh mushrooms
- 4 cups chicken broth
Instructions:
- Place all ingredients in a 6-qt Slow Cooker. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- Remove chicken from slow cooker and shred with two forks. Return to slow cooker and stir.

This is so delicious. It really surprised me how well the ingredients went together. I honestly thought it would not be that good but tried it anyway . I am so glad I gave it a chance.
