The Best Cheesy Chicken and Rice in the Crock Pot

I am a big fan of slow cooker meals. I love dumping everything in the slow cooker and coming home to dinner. This Slow Cooker Parmesan Chicken & Rice is one of our favorites. It is SO easy and SOOOO delicious! Chicken and Rice with garlic and parmesan – all of my favorites in one dish!

This makes a lot of chicken and rice. I shredded my cooked chicken and stirred it back into the rice. You can also leave the cooked chicken breasts whole and just serve them with the cooked rice. Either way is fine. I just prefer finding chunks of chicken in my cheesy rice.

We LOVED this cheesy chicken and rice! It tastes great right out of the slow cooker or leftover for lunch the next day! It reminded me a lot of chicken risotto. I happen to LOVE chicken risotto, so this is right up my alley. Put it on the menu ASAP!!!

How to Make Slow Cooker Parmesan Chicken & Rice

This casserole is super easy to make. Spray the slow cooker insert with cooking spray and lay the chicken in the bottom. You will need 3 or 4 boneless chicken breasts, just depending on their size. You are shooting for about 2 pounds of chicken. Next mix together the soup mix, cream of chicken soup, milk and rice. Pour over the chicken. Cover the slow cooker and let it work its magic! If you feel like the chicken and rice mixture is too thick, feel free to add some chicken broth or extra milk to thin it out. Feel free to throw in some frozen mixed vegetables too. YUM!

This Slow Cooker Parmesan Chicken & Rice uses a packet of Lipton’s garlic soup mix. It will be next to the Lipton’s Onion Soup Mix at the grocery store. Please note, you are only going to just use the mix. Don’t make the soup. Also, make sure to use regular long-grain rice, not instant. If you use brown rice, you will need to adjust the liquid and the cooking time.

Ingredients:

Instructions:

  • Spray the insert of the slow cooker with cooking spray. Place chicken in the bottom.
  • Mix together the cream of chicken soup, Lipton Garlic Soup Mix, milk, and regular rice. Season with salt and pepper, if desired. Pour over chicken. Sprinkle parmesan cheese on top of rice mixture.
  • Cover slow cooker and cook on HIGH for 3 or 4 hours.
  • Remove chicken from slow cooker and chop. Place back in the slow cooker and stir to combine.
  • If rice mixture is too thick, add water, chicken broth or additional milk to thin out.

Notes:

Do not cook rice in advance. I used Great Value Long-Grain Rice.
This recipe is formulated to use long-grain white rice. I have not made this with brown rice. Brown rice and white rice are not equal substitutes. Brown rice uses more liquid and takes much longer to cook. 
I used a Hamilton Beach 6-qt Slow Cooker. It took 3 ½ hours.
The rice will not be light and fluffy like plain cooked rice. The rice is soft. This is a casserole. The mixture will be somewhat thick.

If you can’t find the soup mix, you can substitute a package of Good Seasonings Italian Dressing Mix.

This was quite tasty and will make it again with the following tweaks: I thought the chicken/rice ratio was a little too much meat to rice, so next time I will increase the rice to 1 1/2 Cups with additional milk. Just a personal preference. Also, next time I will use plain onion soup rather than the garlic and herb flavor (too strong), and cook on the low setting to avoid drying out the meat.

  5. Can you tell me the the net weight in oz of the package of seasoning… you say 1 package but I’m not sure the one I am considering is the same size. The one I am looking at is Good Seasoning – Garlic & Herb Dressing/Recipe Mix .75 oz.; so I’m not sure if I should use 1 or 2 packets based on what you used. I’m using 4 chicken breasts.

  7. Plan on making this tonight and wanted to add some veggies. Any idea when I should add in some fresh broccoli and how long it would take?

    1. It would just depend on how you like your broccoli. You can toss it in with everything else or at the end. If adding it at the end would start with about 20 minutes. Adjust up or down if you like your broccoli crisper or softer.

  8. I have made this several times. I have added just a few things to make it my own. I added a 1/2 block cream cheese and I didn’t have the Lipton so I used the better then boullion garlic. After all has cooked and chicken cut up I add veggies and then I placed Parmesan on top and crushed ritz crackers. Comes out wonderful:)

    1. you can use the slow cooker option on the Instant Pot. I assume the cooking time would be the same.

  14. I can’t find the Lipton Savory garlic & herb soup & Dip mix. I found Good Seasons Garlic & herb salad dressing & Recipe mix. Can I use that?

    1. I haven’t made this with minute rice. The cooking time and liquids would change. You would have to play with the measurements & cooking time.

  15. This is probably a silly question but what type of grated Parmesan did you use? Was it the actual grated cheese or the shaky kind that comes out of the jar?

    1. I haven’t assembled this ahead of time. I’m not sure if the rice would soak up too much of the liquid before cooking or not. You can certainly give it a try. Let us know if it turns out!

  16. Would there be an issue if it was left in the crock pot on "keep warm" for a few hours after cooking? Would the rice get mushy?

  19. I haven’t tried this as a freezer meal, so I can’t say with certainty how it would work. I think it would be fine, but I just can’t say with 100% certainty.

  20. Can you prepare this up to the point of cooking and put it into a freezer bag to be used later? Will the rice be ok? Would you wait to add the milk once ready to actually cook if it can be used as a freezer type meal?

    1. Very good! I’m on weight watchers purple and used brown rice and set timer for 25 min with 15 min natural release. Used spray oil and only used 1 tsp of parmesan for my portion. A 0 point meal and so delicious!

    1. Kale – I haven't made this particular recipe with brown rice. Unfortunately, without further recipe testing, I cannot answer with certainty. As always, please use your best judgment regarding substitutions and modifications.

  23. Only have onion soup mix.. what should I add? No garlic cloves but have garlic powder, minced garlic

  24. Do you recommend the shredded block of parmesan cheese, or the powdery parmesan Cheese (like the green can kind)?

    1. Either is just fine. I used fresh grated from the block, but the green can will work just fine.

    1. Hi what can you put instead of 2 cans of cream of chicken can I add extra milk and water as we don’t have this?

  26. Made it with what I had. Used cooked, chopped turkey. Added some frozen broccoli and sliced carrots. Added about 1/2 cup of water and baked in a 9×13 pan at 375 for an hour and 15 minutes. Delish! Can't wait to get some chicken breasts and make it in the slow cooker.

    freash garlic cloves? Im having a hard time finding the garlic mix one

  28. Is there anything that can be substituted for the cream of chicken or is it necessary? Trying to keep sodium level down for my mother's blood pressure.

      1. I didn’t have the soup mix so I used the equilivent of dry ranch mix and some garlic powder. Also added frozen mixed vegetables half way through Came out delicious.

  29. I love my crock pot and I am sure it is lonely since I got my IP for Christmas. Have you tried this recipe in the IP?

    1. I have not made this in the Instant Pot. You can certainly use the slow cooker setting on your IP if you wish.

    1. If adding frozen peas, add them at the end. They only need a few minutes to cook. If adding some frozen mixed vegetables, you can add them at the beginning or at the end and cook for 15 to 30 minutes.

  30. Could you use frozen chicken breasts or do they need to be thawed prior to going in the crock pot?

      1. I would suggest trying it on LOW for 8 hours. I haven’t made it that way, so I am not sure how the rice will be.
