I met Ally on a trip to Gulf Shores, AL. We stay in touch via Instagram and she shared this recipe with me over the summer. O-M-YUM! This stuff rivals our famous Crack Dip! Chicken Legs could not stop eating this dip. We ended up making this our lunch the day I made it. SO good!
How to Make Mexican Corn Dip
This corn dip is super easy to make. Start with chopping and sautéing some smoked sausage and jalapeños in a skillet. Next, combine corn, cream cheese, mayonnaise, pepper jack cheese, with the sausage and jalapeños. Spread the mixture in a baking dish and bake.

- You can use any brand of smoked sausage or turkey sausage.
- What can I substitute for the mayonnaise in this dip? If you don’t want to use mayonnaise, you can use an equal amount of Miracle Whip or sour cream.
- I used canned corn. Feel free to use fresh or frozen instead. Any of the three will work great!
- I used pepper jack cheese. Feel free to use your favorite cheese.
- Can Corn Dip be made in advance? Yes! You can assemble the dip ahead of time and refrigerate until ready to bake.
- Can Corn Dip be frozen? I haven’t frozen this particular dip. Normally I don’t freeze dips that contain mayonnaise. That being said, there isn’t a lot of mayonnaise in this recipe, so it would probably be fine.
- Is Jalapeno Corn Dip spicy? There is a kick from the fresh jalapeños. Feel free to swap the jalapeños for a can of diced green chiles for a milder dip.
- Can Corn Dip be made in the slow cooker? Sure! Mix up the dip and place it in the crockpot. Cover and cook on LOW several hours until heated through.

This dip is perfect for parties! I promise you everyone will go crazy over it. I mean how could they not?!?! We serve the dip with Fritos and tortilla chips. Smoked Sausage Jalapeño Corn Dip
Equipment:
Ingredients:
- 1 lb smoked sausage, diced
- 3 jalapeños, diced
- 1 (8-oz) package cream cheese, softened
- 3 (15-oz) cans corn, drained
- ⅓ cup mayonnaise
- ½ cup shredded pepper jack cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a skillet over medium-high heat, cook sausage and jalapeños until the sausage is brown and the jalapeños start to soften. Drain any fat.
- Combine sausage, jalapeños, cream cheese, corn, mayonnaise, and pepper jack cheese. Spread into the prepared baking dish.
- Bake for 30 minutes, or until bubbly.
