This Taco Meatloaf is our new favorite recipe for Taco Tuesday. I am not typically a meatloaf fan, but I make an exception for this recipe. It is SO good! SO tender and juicy and packed full of amazing flavor. Comfort food at its best! Serve the meatloaf with some Mexican beans and rice or cheesy potatoes and you are set! Give the leftovers a try in a sandwich. You’ll thank me later.
How to Make Taco Meatloaf
This meatloaf is very easy to make. Crumble some lean ground beef in a large bowl. Add an egg, oats, cheddar cheese, taco seasoning, and milk. Gently mix everything together and place in a loaf pan or meatloaf pan. Top the meatloaf with some taco sauce. Pop it in the oven and dinner is done. I garnished the meatloaf with some dried parsley.
I used a meatloaf pan for this recipe. It has an insert that keeps the meatloaf from sitting at the bottom of the pan. This helps keep the grease off the bottom of the meatloaf and makes it so much easier to get it out of the pan!
- Can use ground beef or ground turkey in this recipe.
- What can I add to the meatloaf? Extra cheese, olives, onions, bell peppers would all be good.
- Here is our recipe Homemade Taco Seasoning: https://www.plainchicken.com/homemade-taco-seasoning/
- Can Taco Meatloaf be made in advance? Yes! You can definitely make this the night before and keep it in the refrigerator overnight. Just pop it in the oven when you get home from work and dinner is a breeze!
- Can Taco Meatloaf be frozen? Sure! If you are freezing the meatloaf unbaked, I recommend waiting to add the taco sauce until you are ready to bake. When you are ready to bake the meatloaf, thaw it completely in the refrigerator. Top the thawed meatloaf with the taco sauce and bake as directed below.
- You can also freeze the cooked meatloaf for a quick meal later. I like to go ahead and cut the meatloaf into slices before freezing. To reheat the meatloaf, thaw completely and reheat in the microwave or covered in the oven.

Holy moly is this good. I made your version of taco seasoning and as you said yes it’s way better than store bought. I made it for lunch and paired it with Spanish rice that I added in tomatoes. I must say this is a new favorite. Thank you.
WHY DO YOU KEEP DOING THIS TO ME? Tomorrow I had planned to make Taco Spaghetti and it was a toss up with meatloaf. Now you come up with this. I cannot wait to try this.
Just wanted you to know I love your recipes, but you make it so hard to choose what to make.
Thanks so much.
Cal
