I am obsessed with this Taco Pierogi Casserole. It is crazy good!! Taco meat, salsa, cheese sauce and yummy pierogies. OMG! I wanted to lick my plate. I loved everything about this casserole. All you need is some black beans or a quick guacamole salad and you have a quick and delicious weeknight dinner!!!
How to Make Taco Pierogi Casseorle
This Mexican casserole is super easy to make. Start with browning some ground beef. Add taco seasoning and simmer a few minutes. Add cream of chicken soup, salsa, and Velveeta cheese and cook until it is melted. Remove from the heat and stir in the pierogies. Transfer mixture to a baking dish, top with cheese, and bake.
- What are pierogies? Pierogies are basically potato ravioli. You can find them in the freezer section at the grocery store near the other frozen potatoes.
- Can pierogi casserole be made in advance? Yes! You can assemble the casserole ahead of time and refrigerate it until ready to bake. You may need to add a few minutes to the cooking time if baking straight from the refrigerator.
- Can pierogi casserole be frozen? Yes! You can assemble the casserole ahead of time and freeze unbaked for later. To bake the casserole after freezing, thaw completely and bake as directed below.
- You can substitute ground turkey for ground beef.
- There is no need to thaw the pierogies before adding them to the casserole. They will cook along with the rest of the casserole.
- I used store-bought salsa. My favorite brands are Mateo’s and Kylito’s Salsa. I buy both at Walmart.

- If you are serving this to little ones and are worried about the heat, make sure to use a mild salsa. You could also swap out the salsa for some crushed tomatoes and a little onion.

Taco Pierogi Casserole
Ingredients:
- 2 (16-oz) packages frozen cheese pierogi
- 1 lb ground beef
- 1 (1-oz) package taco seasoning
- ½ cup water
- 8- oz Velveeta, cubed
- 1 (12-oz) jar salsa
- 1 (10.5-oz) can cream of chicken soup
- 1 cup shredded cheddar cheese
Instructions:
- Preheat oven to 350ºF. Lightly spray a 9×13-inch pan with cooking spray.
- In a large skillet cook ground beef over medium-high heat until no longer pink. Drain fat. Return meat to skillet. Add taco seasoning and water. Stir to combine. Cook for 5 minutes.
- Stir in soup, Velveeta and salsa. Reduce heat to low, and cook until the cheese melts, stirring constantly.
- Stir in pierogies and pour into prepared dish. Top with cheddar cheese.
- Bake for 30 minutes or until heated through.

I increased ingredients by 50%, except pierogies (24). My pierogies were pretty much thawed. This was outstanding! I topped with black olives and jalapeños. The next time I will add crushed chips to the top. My family really enjoyed and this will become a regular on our menu.
It tastes good. Next time I am going to fry the Pierogis first with onions. We found the pierogies to taste a little doughy
I made this but converted it to vegetarian by using veggie ground round. I also sautéed in onions, garlic, and a bunch of peppers. It was super good thanks for the recipe!!!!
Wondering if another type of pasta( cheese stuffed raviolis would work in place of the pierogies

It is a potato dumpling – you can find them in the freezer section near the frozen potatoes.
That sure does look and sound good. I'll have to try frozen pierogis
