Easy Weeknight Skillet Meal

This Easy Skillet Lasagna is fabulous!  SO cheesy and delicious!  I love lasagna, but it isn’t really an option for a weeknight. This quick pasta dish has all the flavors of lasagna and only takes minutes to prepare. We both really enjoyed this. Serve this with a side salad and some garlic bread for a quick Italian feast!  I had the leftovers for lunch the next day and it was great (almost better).

How to Make Skillet Lasagna

As I said, this was super duper easy to make. Start with cooking the pasta. While the pasta is cooking, brown some sausage and ground beef. Add garlic, spaghetti sauce, basil, mozzarella, and ricotta cheese. Stir in the cooked pasta and serve.

  • I used Jimmy Dean sausage in this pasta.
  • Feel free to use all sausage, all ground beef, ground turkey or turkey sausage.
  • I like to use Trader Joe’s Roasted Garlic Marinara in this casserole. It is the one with the green label. If you don’t have a Trader Joe’s close by, I also love Rao’s and La Famiglia Delgrosso brand jarred sauces. I find both of those at Walmart, Target, and Publix.
  • I used ricotta cheese in this skillet lasagna.  If you don’t like ricotta, you can use cottage cheese.   If you don’t like ricotta or cottage cheese, try some sour cream or Greek yogurt. 
  • You can use any shape of pasta that you enjoy. I used bowtie pasta, but penne pasta is also good.
  • Feel free to add spinach to the sauce mixture.

What to Serve with Easy Skillet Lasagna

We usually serve this pasta with some cheese bread and a quick salad. This is also good with some green beans or roasted asparagus. We make this dish all the time. This is one of our all-time favorite weeknight meals! It is crazy good and ready to eat in about 20 minutes. You can’t beat that!

  • Cook noodles according to package directions. Drain. Set aside.
  • In a large skillet, brown sausage and ground beef. Drain fat and return meat to skillet.
  • Add minced garlic and cook until fragrant, about 30 seconds. Add spaghetti sauce, basil, mozzarella cheese, and ricotta to the meat. Stir to combine. Add noodles and stir to coat thoroughly.  Simmer about 10 minutes, stirring occasionally.
  •   Top with additional cheese if desired.

  2. My husband and I enjoyed this, but my 11 year old LOVED it. He devoured his dinner the first night, and almost did a happy dance when I told him we were having it again as leftovers. He begged me "Please, please, please make this again soon." I did accidentally use a whole pound of ground beef, so I'm sure he liked that, too. I'm sure we'll be having this again…

  4. Cardio Queen – I brown the meat and put it in a ziplock bag. I freeze the ziplock bag and either put it in the fridge the morning I am making the dish or just throw the meat in the pan frozen. It doesn't take long to thaw out.

  6. When you cook your meats ahead of time and freeze them, what do you recommend as the best way to thaw them before using them in a recipe?
