Buffalo Chicken Potato Casserole

This casserole is made with a container of refrigerated buffalo dip. I'm not sure why I never thought of using dip in place of sour cream in casseroles before. This opens up a whole new world for me in the kitchen!

This was SO good. We both devoured this dish. It makes a ton, and fortunately it reheats well. I divided this into two 8x8-inch pans and  froze half for later. This has a slight kick from the buffalo dip, but I didn't think it was spicy. If you want more heat, add about a 1/4 cup of wing sauce. I promise it will kick it up a notch or two.  Either way, this casserole is delicious! It is going into the dinner rotation.

Buffalo Chicken Potato Casserole
(Printable Recipe)

  • 1 (32oz) bag frozen shredded hash browns
  • 2 cans Cream of Chicken soup
  • 2 (12oz) containers of Buffalo Dip (Heluva Good)
  • 4 cups chopped cooked chicken
  • 2 cups shredded cheddar cheese
  • 2 cups crushed Fritos
Preheat oven to 425.

In a large bowl, combine hash browns, chicken soup, buffalo dip, chicken and cheese. Spread into a lightly greased 9x13-inch pan. Top wit crushed Fritos.

Bake for 30 minutes.

  4. Where do you find buffalo dip? Is it something I can make? I have never seen it for sale in my town.

  5. leahtbug - I found it near the sour cream. I used Heluva Good brand - it is pretty common. If you can't find it, use sour cream and add about 2 Tbsp wing sauce to it (or to your heat liking).

    Enjoy!

  6. I couldn't find the buffalo kind, so I bought the cheddar jalapeño one. Do you think that would work and also add a little wing sauce?

  7. Trish - I think that would work fine. You could also use sour cream and add wing sauce to it. Enjoy!

  11. I plan on halving this recipe because it's just the two of us... Do you think 2 chicken breasts chopped up should be enough? It might sound dumb, but I get confused with cups and breasts :)

  12. Carissa - 2 chicken breasts should be plenty. Enjoy!

    1. You can use 24 oz of sour cream and add buffalo wing sauce to taste. I would start with a 1/4 cup and add more after you taste it.

  15. I just made this and it was delicious. I couldn't find the dip soi made my own with wing sauce and sour cream. I also left a portion without the wing sauce for my little ones and they loved it too. This is a keeper!

  16. I make a very similar recipe that calls for cream of chicken soup, blue cheese dressing and straight up Frank's Red Hot sauce. I top it with french fried onions. It's fantastic!!
