What's for dinner? Weekly Meal Plan with a quick and easy recipe for every night of the week!

Spring is finally here!!! So is the pollen! OMG! Our deck is solid yellow right now. I love the temperatures, but I really do hate all this pollen. My allergies are in overdrive! Despite the pollen, we have started firing up the grill for lunch and dinner this past week. It is supposed to be even warmer this coming week. YAY!!!

I've got a couple of great grilling recipes on the menu this week. I've also included an overnight casserole, an Instant Pot recipe and a couple of Slow Cooker recipes. There is something for everyone this week! As usual, all of the recipes are quick and easy. I even included a crazy good dessert recipe for the week. You don't want to miss it!!

MONDAY
TUESDAY
Doritos Taco Salad - taco meat, kidney beans, tomatoes, lettuce, Catalina dressing, cheese and Doritos. Quick Mexican recipe. Kid-friendly - who wouldn't want to eat Doritos for dinner?!


WEDNESDAY
Instant Pot Crack Chicken Pasta - chicken pasta loaded with cheddar, bacon and ranch! Seriously delicious! 4 minutes of cook time. We ate this two days in a row. Chicken, ranch dressing mix, bacon, chicken broth, water, cream cheese, penne pasta and cheddar cheese. Everyone cleaned their plate! Even our picky eaters!! #chicken #InstantPot #pasta


THURSDAY
FRIDAY
Artisan Grilled Chicken Recipe - chicken marinated in garlic, onion, thyme, sugar, salt, honey and lemon juice - SO flavorful! LOVED the hint of sweetness from the honey. You may want to double the recipe for leftovers.


SATURDAY
Slow Cooker Cajun Chicken Alfredo - everything cooks in the slow cooker, even the pasta! This is AMAZING!!! Chicken thighs, artichoke hearts, alfredo sauce, chicken broth, egg noodles, parmesan cheese and tomatoes. Everyone cleaned their plates! Definitely going into the rotation!


Mushroom Bread Recipe - 5 ingredient appetizer that is ready in 15 minutes!! This stuff is highly addictive. I could eat the whole thing myself! Great for parties.


SUNDAY
Slow Cooker Ranch Pork Chops - THE BEST pork chops EVER! Everyone cleaned their plate!!! SO tender and full of flavor. Pork chops, Ranch dressing mix, cream cheese, cream of chicken soup and white wine/chicken broth. Serve over angel hair pasta. Make sure to spoon the sauce out of the slow cooker - it is SO good!!! #slowcooker #pork #kidfriendly


Bacon Wrapped Asparagus Recipe - fresh asparagus wrapped in bacon, topped with a sweet and savory sauce and baked. SO good! Can wrap asparagus in bacon ahead of time and refrigerate. Great for dinner parties and a quick weeknight side dish!!




Banana Pudding Eclair Cake - I am in LOVE with this easy no-bake dessert. Great for potlucks, cookouts and Easter! Graham crackers, vanilla pudding, banana pudding, cool whip, bananas, chocolate frosting. Can make ahead and refrigerate before serving. Everyone RAVES about this yummy dessert recipe!!
