Our grill is in overdrive right now. I love this time of year when we can grill every day for lunch and dinner. This Cajun Honey Mustard Grilled Chicken is a favorite. It is packed full of amazing flavor. It is a little sweet and a tiny bit spicy.
The chicken is marinated in a quick homemade honey mustard seasoned with Cajun/Creole seasoning. You can use store-bought Cajun seasoning or make your own. I have a great recipe for homemade Cajun/Creole seasoning on the blog here. If you make your own seasoning, you can control the heat and salt content.
How to Grill Chicken at Home
My number one tip for grilling chicken at home is to pound your chicken to an even thickness so it cooks evenly. Place the chicken breasts in a ziplock bag and use a meat mallet to pound the chicken. It only takes a minute and makes a HUGE difference in how the chicken cooks. No more half dry half juicy chicken breasts.
You want to cook your chicken until it reaches an internal temperature of 165ºF. This will take about 8 to 12 minutes depending on the size of the chicken breasts. You don’t want any pink! Use a meat thermometer to check the temperature in the thickest part of the chicken.
