These are my new favorite Black-Eyed Peas. The best part is that they are super easy! This starts with canned peas and adds tons of great flavor from bacon and cajun seasoning. We both could have made a meal out of these peas. Just add some fried okra and cornbread and we would be happy, happy, happy!
As I said, these peas are very simple to make. Simply add peas, chicken broth hot sauce, cajun/creole seasoning, and a bay leaf to a saucepan. Bring to a boil and simmer 15 to 20 minutes. Stir in some cooked bacon, discard the bay leaf, and enjoy.
- Make sure to use low-sodium or no-salt added chicken broth.
- For store-bought Cajun seasoning, I like Tony Chachere or Slap Ya Mama.

Cajun Black Eyed Peas
Ingredients:
- 4 slices bacon, cooked and crumbled
- 3 (15.8-oz) cans black-eyed peas, drained and rinsed
- 1 (14-oz) can chicken broth
- ¼ tsp hot sauce
- 2-3 tsp cajun seasoning
- 1 bay leaf
Instructions:
- In a large pot, combine peas, chicken broth, hot sauce, cajun seasoning, and bay leaf.
- Bring to a boil; reduce heat, and simmer 15 to 20 minutes. Stirring occasionally.
- Stir in bacon and discard bay leaf before serving.
