Pin This RecipeI found this recipe on Tasty Kitchen. I immediately knew I had to try it because it combines three of my favorite foods – chicken, rice-a-roni and French fried onions! This was super quick and easy. I used rotisserie chicken and this was ready in no time flat. We both really enjoyed this; especially the crunchy onions on top.

Chicken Rice-a-Roni Casserole
Ingredients:
- 1 box chicken flavor Rice-A-Roni
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- 1 cup sour cream
- 4 cups cooked chopped chicken (or 1 whole Rotisserie Chicken)
- 1 (6-oz) can French fried onions
Instructions:
- Preheat oven to 350º F.
- Prepare Rice-A-Roni according to package directions. Add soup, sour cream and chicken. Stir to combine.
- Spread rice mixture in a lightly sprayed 9×13 pan. Top rice with fried onions. Bake uncovered for 30 minutes.
Notes:
- Can make in advance and refrigerate or freeze for later.
- Can use low-fat sour cream or plain Greek yogurt.
- I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.

Both hubby & I loved this! Today I substituted ground beef for the chicken, beef flavor Rice-a-Roni for the chicken, and cream of mushroom soup for the cream of chicken. It was just as good…..just a variation. 🙂
I remember my mom made this growing up. But I think it had ground beef. So I'm not sure what the change (if at all) would be for the cream of soup?? Wow. Throwback to the 90s. Now I want this!

You could freeze it. I freeze potato casseroles with sour cream in it all the time

Looks really good Steph. Bev likes to start with Rice a Roni for Spanish rice. We should be passing thru your neck of the woods later this AM on the last leg of our trip home.
Made it tonight. Didn’t have rotisserie chicken so chopped some boneless thighs and browned them. Used rice pilaf as that was what I had on hand. Used cream of chicken with herbs – again what I had. Used the sour cream and fried onions lol. Came out delicious!!!
