Chili and cornbread is one of our favorite meals this time of year. I decided to combine the two into one delicious casserole. Sweet cornbread topped with a quick homemade chili. Comfort food at its best!! SO good! Not only is this casserole delicious, but it is also super easy to make. Ready to eat in under an hour!
How to Make Chili Cornbread Casserole
As I said, this casserole is super easy to make. The hardest part of this recipe is waiting 5 or 10 minutes for the casserole to cool off before digging in. You need to give the cornbread a few minutes to set up before slicing into the casserole. It will fall apart if you dive right in after pulling it out of the oven.
Start with making the cornbread layer with Jiffy mix, creamed corn, cheese, egg, milk. Pop it in the oven and make the chili. In a skillet brown some ground beef. Add a packet of chili seasoning, diced tomatoes, tomato sauce, and chili beans. Remove the cornbread from the oven and top with the chili. Add some more cheese and finish baking.
- Can substitute ground turkey for the ground beef.
- I added beans to my chili. If you don’t like beans, just omit them from the recipe. It will still taste great!
- If you like a spicier chili, swap out the diced tomatoes for a can of Rotel diced tomatoes with green chiles. YUM!

Chili & Cornbread Casserole
Ingredients:
- 1 (8.5-oz) pkg corn muffin mix
- 1 (14.75-oz) can creamed corn
- 2 eggs
- ½ cup milk
- 2 cups shredded cheddar cheese, divided
- 1 lb ground beef
- 1 (1.75-oz) package chili seasoning
- 1 (15-oz) can diced tomatoes, undrained
- 1 (15-oz) can chili beans, undrained
- 1 (8-oz) can tomato sauce
Instructions:
- Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
- In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
- In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add chili seasoning packet, diced tomatoes, chili beans and tomato sauce. Cook for an additional 5 minutes.
- Pour beef mixture over cornbread and top with remaining cup of cheese. Bake for an 20 additional minutes.
- Allow to cool for 5 minutes and cut into 6 or 8 squares. Top with favorite taco toppings, if desired.

I am making it for the third time. This is a favorite now and will keep it in the rotation. So good!!! I use Rotel and a large can of chili beans, but other than that, I stick to the recipe. We add sour cream when serving.

I suggest freezing this casserole after baking. To reheat the casserole after freezing, thaw completely and cover with foil. Bake at 350ºF for 30 to 40 minutes until warm.

You can just skip the cornbread with creamed corn and make buscuits or get some rolls as a substitute. The yummy chili casserole will go with anything!!
No, you do not have to use the corn. If you omit the corn just add a splash more milk to make up for the liquid in the creamed corn.
Another thing I like to do sometimes is add some chopped jalapenos or green onions to the cornbread mixture. Good luck and enjoy.

I'm sure it can. This recipe is very similar to a Mexican cornbread which has the meat on the bottom and cornbread on top. Just cook the cornbread as directed by the instructions.
