I am always looking for a quick Mexican side dish to go with our tacos or Mexican-style grilled chicken. We served this Quick Queso Rice with the Fiesta Lime Chicken I posted earlier this week. It was SO good! I could have actually make a meal out of this rice! It was that good. The best part about this recipe is that it only takes about 10 minutes to make!
How to Make Quick Queso Rice
To make the rice, heat a can Fiesta Nacho Cheese Soup and chicken broth in a 2-quart saucepan over medium-high heat to a boil. Stir the minute rice, shredded cheese, and salsa into the saucepan. Cover the pan and remove it from heat. Let stand for 5 to 10 minutes, until the liquid has been absorbed.
- I used a can of Campbell’s Fiesta Nacho Cheese Soup. They carry it at my Walmart and Publix. If you can’t find the Fiesta Nacho Cheese Soup, you can use a can of plain Cheese Soup and bump up the salsa a tablespoon or two.

- Our favorite store-bought salsas are Mateo’s, Kylito’s, Pace Picante Sauce, and Pace Restaurant Style Salsa.
- This recipe is formulated for instant white rice. Instant brown rice will take longer to cook than white instant rice. You may also need to adjust the liquid content if you use instant brown rice.
- I have not made this with regular rice or brown rice. It would need to be modified to work with anything other than white minute rice. Regular rice needs more water and a longer cooking time.

Quick Queso Rice
Ingredients:
- 1 (10.5-oz) can Fiesta Nacho Cheese Soup
- 1½ cups chicken broth
- 1¾ cups instant rice
- ¼ cup salsa
- ¼ cup shredded cheddar cheese
Instructions:

Could I make this in a rice cooker using the same ingredients? This sounds yummy.
I’ve never used a rice cooker, so I can not say.
The Campbell's Poblano Queso soup is wonderful! I don't cook with condensed soups often but this one is a staple in my pantry. I have to order it via Amazon and they only sell it by the case so I split it with some neighbors and we share recipes back and forth. My husband requests this rice at least once a week!
I'll be on the look out for the Poblano Queso soup! Sounds amazing!
I made this for dinner last night using a can of Campbell's Poblano Queso soup- WOW! My local WM discontinued carrying that flavor though, so next time I'll use the Fiesta Nacho. It was delicious- and so easy!
