My college team has their spring practice game this week, so I’ve got tailgating on my mind! I plan on whipping up a batch of these yummy Sausage Pancake Bites. I love them! Sausage, cheese, maple syrup, and sweet pancake mix. YUM! They are great for breakfast, brunch, lunch, dinner, and parties.
How to Make Sausage Pancake Bites
I used a roll of breakfast sausage for this recipe. I usually use Jimmy Dean or Tennessee Pride brand. You can use regular or hot sausage – either works great. Heck, double the recipe and use one of each. You can even use turkey sausage if you prefer.
- I used a roll of Jimmy Dean sausage in this recipe.
- I used Aunt Jemima pancake mix. Pancake mix is a little different from Bisquick. One difference is that it is a little sweeter. It gives these bites the perfect amount of sweetness. Not too much; just enough.
- Can Sausage Pancake Bites be frozen? Yes! You can assemble the bites ahead of time and freeze them unbaked for a quick breakfast or snack later. Roll the mixture into balls and place on a baking sheet. Pop the sheet into the freezer. When the balls are frozen, transfer them to a freezer ziplock bag.
- To bake the balls after freezing, just add a couple of minutes to the cooking time.
- My number one tip for making this recipe is to mix everything using your KitchenAid Stand Mixer. It is PERFECT! Just attach the dough hook and place all the ingredients in the bowl of the mixer. Turn the mixer on low and it will do all the mixing for you. No more gross sausage hands!
What Sauce to Serve with Sausage Pancake Bites
These Sausage Pancake Bites taste great hot or at room temperature. Chicken Legs prefers them drenched in syrup. YUM! I like to mix a little hot sauce with the maple syrup and dip the sausage balls into that. Sweet & spicy in every bite.
Go ahead and whip up a batch and pop them in the freezer. They make a great weekday breakfast!

Sausage Pancake Bites
Ingredients:
- 1 pound sausage
- 2¾ cup pancake mix
- 2¼ cups shredded cheddar cheese
- ¼ cup maple syrup
Instructions:
- Preheat oven to 400ºF.
- Place all ingredients in the bowl of KitchenAid stand mixer fitted with a dough hook, Mix on low until thoroughly combined.
- Shape sausage mixture into balls. Place on a rimmed baking sheet.
- Bake for 15-20 minutes.
Notes:

How do I make them if I don’t have a fancy stand mixer?

Do you pour the maple syrup in the bowl before shaping into balls or after cooking as a drizzle/dip?

I know your comment is a couple of years back but it made me giggle. My son and daughter in law made these for us when we were visiting and I woke up last week dreaming about them. lol They’re in the oven right now. 🙂

I just made this using Bass Farm Hot Sausage…the only problem I have with this recipe is I CAN’T STOP EATING THEM!!!!! Thank you soooo much Stephanie!!

This is a dumb question, and I may have missed it in the post.. By pancake mix, do you mean just the dry mix or do you make the pancake batter?
Just use the dry mix. Do NOT make the pancake batter.
Be careful. These are addictive! I get cravings for them.
