I used white rice in this casserole. You can use any variety of cooked rice that you prefer – white, brown, jasmine. You could probably even try this with cauliflower rice to make this a low-carb dish.

I see the same question above re:substituting sour cream in place of cottage cheese…is their anyone with an answer or suggestion..Thanks in advance😊
Made this last night and it is a keeper!
Could you use ricotta in the place of the cottage cheese?
Did anyone substitute the cottage cheese?
Yes…I used Ricotta
We thought that there was too much rice to beef ratio. Next time I will cut the rice to 2 cups, or increase the ground beef to 2 pounds and bake in a 9×13 pan. Otherwise, very good!
What If toy don’t have cottage chz, can you double the sour cream?
The recipe says “3 cups of cooked rice”.
How many cups of “uncooked rice” make 3 cups of “cooked rice?”
It depends on what type of rice you use. If you use instant rice the typical conversion is 1 cup uncooked rice = 2 cups cooked. If you are using regular white or long-grain rice, it would be 1 cup uncooked rice = about 3 cups cooked.
Wonder if you could use cauliflower rice instead of regular rice?
I think you could.
