We brushed the chicken with a little extra BBQ sauce before pulling it off the grill. Feel free to add a shot of whiskey to the BBQ sauce for a little extra kick!! The extra BBQ sauce is totally optional, but we really loved it! It also give the chicken some nice color.
We ate this for lunch and dinner on the same day! It was that good!! The leftovers didn’t last long. I’ve added this chicken to the menu for the next week. We are totally addicted to all the flavors in this grilled chicken.

Whiskey Pineapple Chicken
Ingredients:
- ¾ cup bourbon or whiskey
- ¾ cup pineapple juice
- ½ cup bbq sauce
- 4 garlic cloves, minced
- 2 Tbsp worcestershire sauce
- ¼ tsp pepper
- 4 chicken breasts
Instructions:
- Whisk together bourbon, pineapple juice, BBQ sauce, garlic, Worcestershire sauce and pepper. Pour over chicken and let marinate overnight in the refrigerator.
- Remove chicken from marinade and grill for 12 to 15 minutes. Brush with additional BBQ sauce before removing from grill, if desired.

In Canada whiskey means Rye which I have never used in a marinade. Can you give me an idea of what type of whiskey, Would it be Scotch Whiskey for example or could you give me a brand name of the whiskey you use; Just so I know what to use. I am making this for a group and don’t want to mess up the flavour. Thank You!

I made this tonight and it was pretty good, just a little too strong of a taste of the whisky. Since I’m not a whisky person I had no idea what Tom use and ended up with aged Jim beam whiskey bourbon. What one do you use? Perhaps it will be better.

It is honestly just a personal preference. There is no right or wrong one to use. I’ve used Makers Mark and Basil Hayden. If you don’t like whiskey, you can reduce it.

Since chicken breast sizes vary greatly, depending on which one you buy, how many ounces/pounds of chicken do you typically use for this recipe? About 1-1.5 lbs?
It varies. I’ve never weighed it. I just grab 4 chicken breasts. Just throw in as much chicken as you want.

I’ve never used a smoker, so I can not say

you can use whatever you prefer. Cook the chicken until it reaches an internal temperature of 165ºF.

Use any brand that you enjoy.
Do you think I could sub pear juice for the pineapple?
You can make this however you wish.
The pineapple juice works best in a marinade because the citric acid tenderizes the meat better. If you added a couple of tablespoons of lemon juice with the pear it would help achieve the same thing.
I would go with apricot or peach nectar. Pear is so mild, I don’t think you could taste it over the BBQ sauce.

Does it have to be sugar free bbq sauce we didn’t we seem to have many of those here in Walmart out of the ones you mentioned we only have sweet baby rays
Any BBQ sauce is fine. I only listed my favorites for reference.

Could you reduce and thicken the marinade to use as a base for the bbq sauce you brush on it at the end?

If you prefer rum, that would be fine.
I am not the recipe author, but I don’t see why not 🙂 Just reserve a little marinade ON THE SIDE to reduce, but do not use the liquid you marinated the raw chicken in to make the sauce. Does that make sense?..lol 😉

I actually used this on boneless pork ribs, and they were awesome, even with only an 8 hour soak. I’m sure overnight would be even better. I used quite a bit less garlic, as my hubby isn’t a fan of it.
I also only poured about 2/3 of the mixture over the meat. I added some brown sugar and balsamic vinegar to the rest, and reduced it in a small saucepan over medium high heat – it made an awesome glaze to brush on while grilling the meat and some veggie kabobs.

Yum! That glaze looks amazing — I haven't done a lot of booze in marinades, but clearly I've been missing out.
Oh wow, does that look good! The only thing I would add to that is a slice of pineapple! Slathered with BBQ sauce and thrown on the grill for a minute. Can't wait to try this recipe!
