Better than Jim 'N Nick's Cheesy Biscuits


This is our new favorite cheesy biscuit recipe - it is SOOO good.  I am just going to say it - these just might be better than Jim 'N Nick's famous cheesy biscuits (which I could eat at least a dozen of all by myself). We loved these. The best part - they are incredibly easy to make!  They are even good reheated.  We ate them with dinner the next night too.  Just slap some honey butter on these puppies and go to town!



Better than Jim 'N Nick's Cheesy Biscuits
1 1/2 cups Bisquick
3/4 cup buttermilk
3 Tbps sugar
1/4 tsp vanilla
1 cup cheddar cheese, shredded

Preheat oven to 425.  Stir together all ingredients just until combined.  Scoop into a mini muffin pan coated with cooking spray.  Bake 12-15 minutes, until golden.  **I used a medium cookie scoop and got 20 muffins**

I always love biscuits, and with your recipe with the addition of cheddar cheese, fabulous, now I can eat over a dozen.

I didn't get any cheese flavor. I think I'd just leave the cheese out and save the money and calories. These would make a great breakfast biscuit.

I will have to try these. I always make the ones on Pioneer Woman's site, and they are DELICIOUS, but they require 3 cups of cheese, which can get pricey. Thanks for the recipe!

Thank you, our dinner was cooked but just stumbled upon this and happened to have some buttermilk so whipped up a batch and they are in the oven now!!

What's a good substitute for buttermilk if none on hand?

Catzmum - 4 1/2 teaspoons white vinegar, or fresh lemon juice and 1 cup milk

You can also just use milk.
