How to Cook Filets like the Steakhouse

These Steakhouse Filets are the BEST steaks EVER! This is our favorite way to make steaks at home. We have been cooking steaks this way for years and they are always perfect. While we love to fire up the grill, this cooking method ensures a perfectly cooked steak every time.

There are two types of people. Those that say steaks only need salt & pepper and those that marinate steaks. We are Team Marinade. Filets don’t have a lot of fat. They need a little boost. We like to season the steaks with some Montreal Steak Seasoning and then let them hang out in some Dale’s Steak Seasoning & Worcestershire sauce for a couple of hours before cooking.

How to Cook a Steak Like a Restaurant

Cooking restaurant-quality steaks at home is super easy. Start with heating some oil in a cast-iron skillet for a few minutes. Once the oil is hot and starting to smoke, place the steaks in the pan let them cook 4 or 5 minutes. Don’t touch them. Flip the steaks over and place them in the oven. The cooking time will just depend on what internal temperature you want and how thick the steaks are. Use a meat thermometer to ensure the steak is cooked how you like it.

  • Rare 120º to 125ºF
  • Medium-Rare 125º to 135ºF
  • Medium 125º to 145ºF
  • Medium-Well 145º to 155ºF
  • Well-Done 155ºF+

As I said, this is our go-to method to cook steaks. We had some friends over a few weeks ago for dinner. I made these steaks, and they were blown away! They asked for the recipe and made them for themselves the next week. Give this recipe a try the next time you want a great steak at a fraction of the cost of the fancy steakhouse.

Instructions:

  • Season steaks with Montreal Steak Seasoning. Pour Dale's & Worcestershire sauce over steaks and refrigerate for one to four hours.
  • Preheat oven to 425ºF.
  • Heat a cast-iron skillet on medium-high heat for 5 minutes.
  • Sear filets in oil on one side for 4-5 minutes.
  • Turn them over, place the pan in the oven and roast to desired doneness.
  • Rare 6 minutes; Medium-Rare 8 minutes; Medium 10 minutes. Allow filets to rest for 5 minutes before serving.

Notes:

Can season steaks with salt & pepper instead of marinade listed above.

  2. Nothing better than a great filet! Your post says "She marinated the steaks for a few hours in Dale's before she cooked them" but I don't see info on that in your recipe. Can you elaborate, please? 🙂 Thanks!

    1. Just pour the Dale's marinade on the steaks and put them in the refrigerator until you are ready to cook them. Are you familiar with Dale's?

  3. Don't let those tasty bits in the pan go to waste. Put the skillet back on the burner, and pour about a half a cup of red wine in it to deglaze it. Once the wine has reduced a little, add a pad of butter and a few shallots or green onions. Stir it all together for a minute or two, then drizzle over your steak or use it as a dipping sauce. The whole process can be done in a matter of minutes while your steaks rest. When I do this, I also rub the olive oil on the steaks to try avoid access oil in the pan, as you don't want a greasy sauce.

  4. You know I prefer my steaks on a hot cast iron grill grate, but these look good Steph. I've actually done them like this a few times. Shhh! Don't tell, I'll get my BBQ card revoked.
