As I've said before, I love quick meals. I really love slow cooker meals because dinner is ready when I get home from work!! This recipe couldn't be simpler. It comes from Christy over at SouthernPlate.com Christy has lots of great recipes and most (if not all) of them are super easy. She also has a new cookbook that just came out. I have my eye on it in the iBook store.
I saw Christy tweet about this chicken & rice recipe and immediately put it on my menu. It turned out great. Christy suggests cooking your rice the night before to cut down the wait time. I just decided to make this super easy by using a bag of Uncle Ben's microwave rice. This was ready within 90 seconds of coming home! I am already planning on making this again. We both loved it.
Slow Cooker Chicken and Wild Rice
2-4 chicken breasts
1 can cream of mushroom soup
1 onion, chopped (I used minced onion flakes)
1 box Long Grain and Wild Rice with Seasonings (I used Uncle Ben’s microwave rice)
Place chicken in bottom of slow cooker. Sprinkle chopped onion over top. Top with cream soup. Cover and cook on low 7-8 hours. Cook rice according to package directions*. Before serving, stir rice in. Serve hot.
*Can cook rice the night before and place in refrigerator. Before serving, stir cold rice in and let cook for another ten minutes or until rice is heated through.
