Creamy Rotel Dip - Football Friday

It's Championship Saturday tomorrow.  I will be watching the SEC Championship and snacking on this dip.  This is a kicked up version of my favorite Rotel Queso Dip.  This version has sausage, cream cheese and sour cream mixed in.  It is so creamy and delicious.  It is one of those dips that you keep saying "This is my last bite" and you just keep eating anyway.  You may want to double the recipe because this goes quick.  I like to keep this dip warm in the crockpot.  Serve this with some tortilla chips for an instant hit.

Creamy Rotel Dip
(Printable Recipe)

1/2 lb sausage
8 oz cream cheese
8 oz Velvetta
1/2 cup sour cream
1 can Mexican Rotel Tomatoes, undrained

In a medium skillet, brown sausage and drain. In a large bowl, heat cream cheese, velveeta and sour cream in microwave until melted. Stir in tomatoes and sausage.

Pour in crock pot to keep warm. Serve with tortilla chips. (I like to use Xochitl chips - I find them in the organic section at Publix)

This sounds so yummy! What type of sausage do you use, breakfast sausage?

This sounds great. I will definitely add it to my dip line-up. We will enjoy it while watching our #1 Indiana Hoosiers play.

Steph, do you drain both cans of rotel or just one?

Stephanie Parker said...

Carol & Amanda - it should just be one can of Rotel drained.

I made this for today's SEC Championship game as well and it was to die for! We pretty much ate the entire thing!

What kind of chips are those--they look really thin and crispy like many restaurants have, but I can never find ones so thin!
Thanks,
Grace

I used xochitl chips - I find them in the organic section at Publix. They also sell them at Whole Foods.

Yes, you have kicked it up a couple of notches.

Steph... This is a great dip and basically the same one we've been making for church pot-lucks or parties. It's really good, but not even the dip is as good as that tablecloth under the dip... WAR EAGLE!

I love this dip. I always use two cans of Rotel. One mexican the other original. I just like it chunkier. Some prefer it smoother. In that case I dish out mine and add extra Rotel to my dish. Yummm!

I can't wait to try it!!

A classic and one of my favorites. This dip is how I found out about Rotel way back in the 80's. Love that stuff!
