It’s Championship Saturday tomorrow. I will be watching the SEC Championship and snacking on this dip. This is a kicked-up version of my favorite Rotel Queso Dip. This version has sausage, cream cheese and sour cream mixed in. It is so creamy and delicious. It is one of those dips that you keep saying “This is my last bite” and you just keep eating anyway.
How to Make Creamy Rotel Dip
This dip is super easy to make. Start with browning the sausage. Drain the fat. Add Velveeta cheese, cream cheese, and Rotel diced tomatoes and green chiles. Cook on low heat until the cheese has melted. Stir in some sour cream and dig in.
- I used a roll of Jimmy Dean breakfast sausage. You can use regular or hot.
- Can substitute ground beef for sausage.
- I used a can of Mexican Rotel diced tomatoes and green chiles. Can use regular, mild, or hot Rotel in this dip.
- Can make the dip on the stovetop, in the microwave, or in the crockpot.
- You can double the recipe for a large crowd.
- I like to make the dip on the stove and keep it warm in the slow cooker.
- Serve the dip with celery sticks, bell pepper slices, or gluten-free chips for a gluten-free dish.

Creamy Rotel Dip
Equipment:
Ingredients:
- ½ lb sausage
- 1 (8-oz) package cream cheese
- 1 (8-oz) package Velveeta
- ½ cup sour cream
- 1 (10-oz) can Mexican Rotel Tomatoes, undrained
Instructions:
- In a medium skillet, brown sausage and drain fat.
- Add cream cheese, Velveeta, and Rotel to skillet. Cook on low until cheese has melted. Stir in sour cream.
- Pour in crock pot to keep warm. Serve with tortilla chips.

I love this dip. I always use two cans of Rotel. One mexican the other original. I just like it chunkier. Some prefer it smoother. In that case I dish out mine and add extra Rotel to my dish. Yummm!
Steph… This is a great dip and basically the same one we've been making for church pot-lucks or parties. It's really good, but not even the dip is as good as that tablecloth under the dip… WAR EAGLE!

I used xochitl chips – I find them in the organic section at Publix. They also sell them at Whole Foods.
What kind of chips are those–they look really thin and crispy like many restaurants have, but I can never find ones so thin!
