It’s Championship Saturday tomorrow. I will be watching the SEC Championship and snacking on this dip. This is a kicked-up version of my favorite Rotel Queso Dip. This version has sausage, cream cheese and sour cream mixed in. It is so creamy and delicious. It is one of those dips that you keep saying “This is my last bite” and you just keep eating anyway.
How to Make Creamy Rotel Dip
This dip is super easy to make. Start with browning the sausage. Drain the fat. Add Velveeta cheese, cream cheese, and Rotel diced tomatoes and green chiles. Cook on low heat until the cheese has melted. Stir in some sour cream and dig in.
- I used a roll of Jimmy Dean breakfast sausage. You can use regular or hot.
- Can substitute ground beef for sausage.
- I used a can of Mexican Rotel diced tomatoes and green chiles. Can use regular, mild, or hot Rotel in this dip.
- Can make the dip on the stovetop, in the microwave, or in the crockpot.
- You can double the recipe for a large crowd.
- I like to make the dip on the stove and keep it warm in the slow cooker.
- Serve the dip with celery sticks, bell pepper slices, or gluten-free chips for a gluten-free dish.

I just made this tonight. I used shredded chicken instead of sausage. It was so good. My husband had several helpings! I will definitely make this again.
I used chorizo it was very good!
Can you make this a day ahead and just reheat??
Love this recipe…i like to substitute a can of no beans chili instead of sausage or ground beef
How much does this make? Like serving wise?
What is the serving size for this recipe? Serves how many people? I plan to make it Christmas eve and want to have enough!!!
It will serve 8 to 10 people. If you have a crowd, you probably want to double the recipe.
Does it matter what kind of sausage? Thanks!
I used Tennessee Pride sausage. I've also used Jimmy Dean, but any brand of breakfast sausage will work. Enjoy!

What A Recipe, Yummy!!!
Found this recipe on Pinterest! I have two questions though. 1) If I cook the sausage beforehand, can I just throw everything in a slow cooker and cook it on low for a couple hours? 2) How many servings do you think this makes?
I would cook the sausage before putting it in the slow cooker. I think this would only need about an hour to melt and be ready to eat.
I need to know how many this serves to!
Just made this- we used the original rotel tomatoes. LOVE it! Boyfriend said he'd maybe like some more sausage In it. However, I love it the way it is! Cannot stop eating. Thank you!
When you say Mexican Rotel, do you mean the one with Lime and cilantro?
This is our new favorite queso dip, Steph! Thank you so much for sharing- it's delicious!
So glad you are enjoying it! I LOVE queso too!
THis looks amazing!!! Yum!
A classic and one of my favorites. This dip is how I found out about Rotel way back in the 80's. Love that stuff!
I can't wait to try it!!
I love this dip. I always use two cans of Rotel. One mexican the other original. I just like it chunkier. Some prefer it smoother. In that case I dish out mine and add extra Rotel to my dish. Yummm!
Steph… This is a great dip and basically the same one we've been making for church pot-lucks or parties. It's really good, but not even the dip is as good as that tablecloth under the dip… WAR EAGLE!
Yes, you have kicked it up a couple of notches.
I used xochitl chips – I find them in the organic section at Publix. They also sell them at Whole Foods.
What kind of chips are those–they look really thin and crispy like many restaurants have, but I can never find ones so thin!
Thanks,
Grace

I made this for today's SEC Championship game as well and it was to die for! We pretty much ate the entire thing!
Yum! I love cheesy dips!
Carol & Amanda – it should just be one can of Rotel drained.
Steph, do you drain both cans of rotel or just one?
This sounds great. I will definitely add it to my dip line-up. We will enjoy it while watching our #1 Indiana Hoosiers play.
Thanks! Must try!
Tricia – I use Tennessee Pride breakfast sausage
TWO cans of Rotel? Is this right?
This sounds so yummy! What type of sausage do you use, breakfast sausage?

It will keep 3 to 4 days in an airtight container in the refrigerator.
