If you want to reduce the sodium content in this dish, rinse the peas before adding them to the pot and use reduced sodium chicken broth. I almost always use reduced sodium chicken broth, and I don't think you loose any flavor with it. Either way, these black-eyed peas will be delicious!
Cajun Black-Eyed Peas
- 4 slices bacon, cooked and crumbled
- 3 (15.8oz) cans black-eyed peas, drained
- 1 (14oz) can chicken broth (can use reduced sodium)
- 1/4 tsp hot sauce
- 2-3 tsp cajun seasoning
- 1 bay leaf
In a large pot, combine peas, chicken broth, hot sauce, cajun seasoning, and bay leaf.
Bring to a boil; reduce heat, and simmer 25 minutes. Stirring occasionally.
Stir in bacon and discard bay leaf before serving.
