Pin This RecipeGrilled Vegetables are a favorite this time of year. We love to chop up some veggies and throw them on the grill with some chicken, pork or steaks. These Roasted Garlic Grilled Vegetables are so simple and they taste fantastic!
These Grilled Vegetables are super easy to make. Simply chop the vegetables of your choice and toss with olive oil, brown sugar, chili powder, garlic, paprika, salt, and pepper. We used squash, corn, bell peppers, red onion, and mushrooms. This would also be good with zucchini, asparagus, or broccoli. You can leave out the brown sugar if you are looking for a low-carb/keto-friendly side dish.
We cooked these vegetables in a grill basket. If you don’t have a grill basket, you can cook the vegetables in a foil packet. Make sure to use heavy-duty foil. I would suggest double wrapping the vegetables in foils so there isn’t any leakage. Either way you decide to grill them, these are sure to be a hit!!

Roasted Garlic Grilled Vegetables
Ingredients:
- 1 ear corn, cut into chunks
- 1 medium red onion, cut into wedges
- 1 green bell pepper, cut into chunks
- 1 red bell pepper, cut into chunks
- 1 orange bell pepper, cut into chunks
- 1 small yellow squash, sliced
- 8- oz sliced mushrooms
- 2 Tbsp olive oil
- 2 garlic cloves, minced
- 1 Tbsp brown sugar
- ½ tsp chili powder
- ½ tsp paprika
- ¼ tsp salt
- ⅛ tsp pepper
Instructions:
- Toss vegetables with olive oil.
- Combine garlic, brown sugar, chili powder, paprika, salt and pepper. Sprinkle over vegetables.
- Place vegetables in grill basket and grill for 15 minutes, until vegetables are tender.

If you don’t have a grill available can you do these in the oven… and how would you do it?
I would try them on a rimmed baking sheet at 425ºF for 20 to 25 minutes.
