What are Pierogies?
Pierogies are similar to ravioli. It is a pasta dough filled with a variety of sweet or savory fillings. For this pierogi casserole, I used two boxes of frozen pierogies. I used potato and cheese pierogies. They were perfect in this casserole. There is no need to thaw the pierogies before adding to the casserole, they will cook in the oven along with the other ingredients.
How to Make Chicken Pot Pie Pierogi Casserole
This Chicken Pot Pie Pierogi Casserole is super simple to make. Just combine all the ingredients in a large bowl and mix until throughly combined. You don’t need to thaw the pierogies or the frozen mixed vegetables. They will cook in the casserole and be perfect.
To cut down on the prep time, I used a rotisserie chicken. This casserole took a whole Costco rotisserie chicken. If you don’t have those giant Costco chickens, you will need about 4 cups of cooked chopped chicken.
Can Pierogi Casserole be Frozen?
We ate this for lunch and the leftovers for dinner. SO good!! You can make this Chicken Pot Pie Pierogi Casserole ahead of time and refrigerate or freeze unbaked for later. I always thaw the casserole before baking. If you want to bake the casserole from frozen, you will need to add a few extra minutes to the cooking time. I would start with 15 extra minutes and just check the casserole until it is bubbly.

- To bake after freezing, thaw completely and bake as directed above.
- I used rotisserie chicken for the cooked chicken.
- I used Mrs. T’s Frozen Pierogies – they are in the freezer section near the frozen potatoes.

I used fresh canned corn in place of mixed veggies, used mini pierogies, and was AWESOME. Mini Pierogies best for kids!
Great recipe. One issue I had was the bake time. Mine was still not hot all the way through after 45 minutes in the oven. Using cold sour cream, frozen pierogis and vegetables with cold cheese and room temp soups. Great flavors , but had to add another 25 minutes to get hot all the way through. Happy that it called for cooked chicken. Will absolutely make this again, just will adjust my cooking time. Thank you for this recipe.
Easy and delish! Will make again. Used potato, bacon, and cheese pierogis I purchased at Costco.
Made this last night and it was really good! Cut the recipe in half, worked out great for two people plus leftovers. I had a frozen pie crust that I didn’t use for Thanksgiving last week, so I baked it and crumbled it on top of the casserole and it was super tasty!
I was thinking using the mini frozen pierogies – do you think I would need to adjust the cooking time?
I’ve never used mini pierogies, so I can’t say.
Hi Stephanie,
I love all your recipes, and use Costco Rotisserie chickens often. What I also do is take the carcass, and make my own chicken stock, and freeze it for use later. My wife is allergic to onions, and it’s hard to find anything without them, so I make my own without. I also found that Rotel Diced Tomatoes and Chilies don’t have onions, and doesn’t effect her, so I buy that by the case!
Thanks for all the great recipes!
