Sausage and Ranch Tater Tot Breakfast Casserole - great make-ahead recipe!  SO easy! Only 6 ingredients - sausage, cheddar cheese, tater tots, eggs, milk, and ranch dressing. Can freeze for later. Great for potlucks, overnight guests, breakfast, brunch, lunch or dinner. Serve with some fruit and biscuits. Everyone loves this easy breakfast casserole!!

The BEST Sausage Tater Tot Breakfast Casserole

This Sausage & Ranch Tater Tot Breakfast Casserole is a new favorite in our house. SO easy and it tastes AMAZING! We both ate way too much of this yummy casserole. It is great for breakfast, brunch, lunch or dinner. It is perfect for overnight guests and potlucks too. We served this with some fruit and biscuits. YUM! It is already back on the menu for brunch this weekend. I can not wait!

How To Make Sausage & Ranch Tater Tot Breakfast Casserole

This Sausage & Ranch Tater Tot Breakfast Casserole is very easy to make. Just cook the sausage, mix with Ranch dressing, toss in the cheese and tater tots. Finally, whisk together the eggs and milk and pour over tater tots. That's it!

I get a lot of questions about what type of sausage to use in my breakfast casseroles. I use two rolls of breakfast sausage such as Jimmy Dean sausage. I typically use regular sausage, but you can certainly use hot sausage or half regular and half hot.

Another question I get about tater tot casseroles is if you need to thaw the tater tots before adding to the casserole dish. I don't thaw the tater tots before adding them to the casserole dish. I just toss them in the casserole dish frozen and they turn out perfectly.

Can You Freeze Sausage & Ranch Tater Tot Breakfast Casserole?

Absolutely! You can make this Sausage & Ranch Tater Tot Breakfast Casserole ahead of time and refrigerate overnight or freeze unbaked for later. You could even split the recipe into two pans and bake one now and freeze one for later. 

If baking after refrigerating overnight, you may need to add a few minutes to the cooking time. If baking after freezing, thaw completely and bake as directed below.

ingredients:

  • 2 lb hot breakfast sausage
  • 1 (30-32oz) bag frozen tater tots
  • 1-1/2 cups Ranch dressing
  • 2 cups shredded cheddar cheese
  • 8 eggs
  • 2 cups milk

instructions:

  1. Preheat oven to 350 degrees.
  2. In a large skillet, cook sausage until no longer pink. Drain fat.
  3. In a large bowl, combine cooked sausage and ranch dressing. Add tater tots and cheese. Stir. Pour into a lightly greased 9x13-inch pan.
  4. Whisk together eggs and milk. Pour over tater tot mixture.
  5. **Cover and refrigerate or freeze at this point if baking later.**
  6. Bake uncovered for 60 - 70 minutes, or until eggs are set.

NOTES:

May need to add more time to the cooking time if baking after refrigerating.
If baking after freezing, thaw completely and bake as directed above.
