These Bacon Smothered Carrots are the best carrots EVER! We served these with our holiday dinner and everyone raved about them! Tender carrots baked in brown sugar sauce, and bacon. I mean, what’s not to love?!?!?! I could honestly make a meal out of just these delicious carrots! This makes a lot of food. It is the perfect side dish for potlucks, cookouts, and your upcoming holiday meal. Add these to your menu. You won’t be disappointed.

How to Make the Brown Sugar Carrots

This is such an easy recipe to make with only a few simple ingredients. Peel raw carrots and slice them into 1/4-inch pieces. Place carrots on the bottom of a 9x-13-inch baking dish. In a large skillet, cook a pound of bacon over medium-high heat until crispy. Remove bacon from skillet and drain on paper towels. Chop bacon and sprinkle it over the carrots. In a bowl, whisk together soy sauce, melted butter, brown sugar, and garlic. Season with salt and black pepper, if desired. Pour brown sugar mixture over the carrots and bacon and bake.

This easy carrot side dish has quickly become one of our favorite side dishes. It is really the only way we like to eat carrots. I mean, carrots and bacon and brown sugar – what’s not to love? We like to serve these carrots with a baked chicken breast, roast pork loin, pork chops, and, of course, HAM! They will definitely be on our upcoming Easter holiday dinner along with our favorite green beans and scalloped potatoes. This easy side dish recipe is also great for summer cookouts and potlucks. Ingredients:

  • 3 -lb carrots, peeled and sliced into ¼-inch slices
  • 1 -lb bacon
  • cup brown sugar
  • ¼ cup unsalted butter, melted
  • ¼ cup low-sodium soy sauce
  • tsp garlic powder

Instructions:

  • Preheat the oven to 400ºF.
  • Pour sliced fresh carrots in an ungreased 9×13-inch pan.
  • In a large skillet, cook bacon until almost done but not too crispy. Remove from skillet, drain on paper towel and chop. Sprinkle cooked bacon on top of carrot chips.
  • Whisk together brown sugar, melted butter, soy sauce, and garlic powder. Pour over carrot chips.
  • Bake uncovered for 40 minutes.

  1. These were really great, everyone loved them. However, I made them for two different family dinners, the first time the carrots were still rock hard after 40 mins in the oven at 350…added 10 more mins and still hard… and then had to microwave them… second time, I boiled them for 15 mins first and then only baked for a few mins to warm everything up – much better the second time!

    1. I haven’t made this in the crockpot, so I can not say with certainty. I would start with a few hours and check the tenderness of the carrots.
