There are only a few simple ingredients in this recipe – yellow squash, zucchini, olive oil, garlic salt, pepper, and parmesan cheese. Feel free to add some thinly sliced Vidalia onion to the mixture. YUM!
We love to serve this squash with grilled chicken and steak. It is also great with pasta. My favorite part about this squash is the parmesan cheese! I used freshly grated parmesan cheese. If you don’t have a block of parmesan cheese, you could definitely use the canned stuff. Either way, it will be delicious!
This squash is a great low-carb/keto-friendly/gluten-free side dish. This recipe is easy to double or triple for a crowd or half for just two people. We make this at least once a month! Baked Parmesan Squash
Ingredients:
- 2 medium zucchini squash
- 2 medium yellow squash
- 1 Tbsp olive oil
- ¼ tsp pepper
- ¼ – ½ tsp garlic salt
- 1 cup grated parmesan cheese
Instructions:
- Preheat oven to 450°F.
- Cut squash in slices and toss with olive oil. Place on a cookie sheet in a single layer.
- Sprinkle squash with pepper, garlic salt and parmesan cheese.
- Bake for 20-25 minutes, until lightly browned on top.

Do you use the dry Kraft Parmesan cheese in the canister or the “wetter” grated one in the dairy section?
You can use the canned parmesan cheese or freshly grated. Either is fine.

I just made this last night. Have had It numerous times this summer/fall. Instead of tossing the zucchini with olive oil. I use my Mr. Mister and spray the pan. Then put the zucchini on it. Spray again and then add the seasoning and feta cheese.
We love squash during the summer when it is fresh. What a great side dish!
