This side dish is effortless to make with only a few simple ingredients. Rince long grain white rice and spread it into the bottom of a 2-qt baking dish. Sprinkle the rice with ranch dressing mix. Add chicken broth and butter. Cover the casserole dish with aluminum foil. Bake in a preheated oven for 30 minutes. Remove the foil and stir the rice. Bake uncovered for an additional 25 to 30 minutes. Fluff the cooked rice with a fork and season with salt and black pepper to taste. Garnish with chopped parsley or green onions.

Ingredients:

  • 1 cup uncooked long-grain white rice, rinsed
  • 2⅔ cups unsalted chicken broth
  • 1 (1-oz) package ranch dressing mix
  • 6 Tbsp unsalted butter

Instructions:

  • Preheat oven to 425ºF. Spray a 9×9-inch baking dish with cooking spray.
  • Add all the ingredients to the prepared pan.
  • Cover the pan tightly with aluminum foil.
  • Bake for 30 minutes.

  1. Made this tonight. After 30 minutes took it out, put in broccoli, mushrooms, and cheese. It was so good! I must confess my daughter makes all of the spice mixes for us as I can’t smell. (Born with no sense of smell) But I can taste! WOW!! So it was Ranch with a twist!

  2. I’d like to substitute riced cauliflower for the rice. How much cauliflower should I use? Certainly more than a cup?

    1. Cauliflower is not a substitute for real uncooked rice. This recipe would have to be completely reformulated if you use cauliflower.

    1. I am sure that you can. I have not made this in the pressure cooker, so I can not give any guidance on cooking times, etc.
