I’ve always been intimidated by the thought of making chicken and dumplings. It seemed like a lot of work, so when I came across this recipe, I knew I had to give it a try. It was simple and really quick to make. It was fabulous! Chicken Legs especially loved it. I used a rotisserie chicken and this came together in no time. We will be making a turkey version this weekend!
Chicken & Dumpling Casserole
Equipment:
Ingredients:
- 3-4 cups of cooked chicken I use a rotisserie chicken
- 2 cups chicken broth
- ¼ cup unsalted butter
- 1 cup all-purpose flour
- 1¼ tsp baking powder
- ¼ tsp salt
- 1 cup milk
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
Instructions:
- Preheat oven to 400ºF.
- Melt butter in the microwave and pour into bottom of a 9×13 pan. Shred the chicken and spread it on top of the butter.
- Whisk together the milk and the flour, baking powder and salt. Slowly pour over the chicken. Don’t stir.
- Whisk together chicken broth and cream of chicken soup. Pour soup over the flour and milk mixture. Don’t stir.
- Bake uncovered for 35 to 45 minutes, or until dumplings are golden brown.
Notes:
- I suggest using Unsalted Cream of Chicken Soup in this dish to control the sodium.

I am making this for the second time! It is so good and I was surprised it really turned into dumplings. Much easier way to make dumplings and my husband loved it!

Have you tried freezing this?
I have never frozen this recipe. If you try it, I suggest freezing after baking and reheating.
Can you use butter with salt if you don’t have unsalted butter ?

I’ve made this several times since I found it two years ago. One of my favorite comfort foods. I’ve even done it with my leftover turkey now and it’s just as good! Made it for my husbands family and they all devoured it. 8 year old and 3 year old will both eat it too.

I made this last night, I didn’t have enough chicken so added a bag of Trader Joe’s frozen artichokes,thawed, plus two tsp fresh garlic. It was amazing! My husband went back for seconds. Thank you 🙏🏻 😊
I made this with a couple of modifications: I added frozen mixed veggies, some chopped onion and chopped celery. Adjusted liquid as needed.
If I use self rising flour do I leave out the salt and baking powder?
you don’t need the salt or baking powder if you use self-rising flour.

One of my FAVES ! I always double this recipe for a family dinner, and bake it in my cast iron dutch oven. Haven’t tried it with veggies added but I know it could only be great.
