Chicken Legs requested chicken pot pie the other night. I didn’t want to make pie crusts, so I decided to give a Chicken Pot Pie Bubble Up a try. It turned out great! We both cleaned our plates. This dish is a whole meal in one dish. You have chicken, bread and veggies all in one.

I used half of a rotisserie chicken in this recipe and it came together in minutes. I always have frozen rotisserie chicken in the freezer. If you don’t have rotisserie chicken, just cook up a couple of chicken breast and chop them up.

Chicken Pot Pie Bubble Up

ingredients:

  • 2 cup cooked, chopped chicken
  • 1 can (10.75-oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup cheddar cheese
  • 1-1/2 cups frozen mixed vegetables
  • 1 (12-oz) can refrigerated Grands Jr biscuits

instructions:

  1. Preheat oven to 375 degrees. Lightly spray a glass 9×13-inch pan with cooking spray.
  2. In a large bowl stir together chicken, soup, sour cream, cheese and frozen vegetables. Remove biscuits from can and cut each into 4 pieces. Toss with chicken mixture.
  3. Pour biscuit mixture into prepared pan. Spread biscuits out if they are clumped together.
  4. Bake for 25-30 minutes.
