I was looking through my “crack” recipes and noticed that I was missing a Cracked Out Breakfast Casserole. I had to fix this oversight ASAP! I am on a tater tot kick lately, so I decided to make a Cracked Out Tater Tot Breakfast Casserole. OMG! SO good! SOOOO good!

This is seriously one of the best breakfast casseroles I’ve ever made. Cheddar, bacon, ranch and tater tots – how could it be bad?!?! The best part about this casserole is that it can be made ahead of time and refrigerated or frozen for later. I LOVE make ahead meals!!

This recipe uses two pounds of bacon. If you want to cut down on the calories, feel free to use turkey bacon. This Cracked Out Tater Tot Breakfast Casserole is great for breakfast, lunch or dinner. It is the perfect dish for overnight guests or a party. We’ve made this several times and everyone asks for the recipe!!

Cracked Out Tater Tot Breakfast Casserole

Ingredients:

Instructions:

  • Preheat oven to 350ºF degrees. Lightly spray a 9×13-inch baking dish with cooking spray.
  • In a large skillet, cook bacon. Chop the cooked bacon into pieces.
  • In a large bowl, toss together tater tots, cooked bacon, and cheeses. Pour into prepared baking dish.
  • Whisk together eggs, Ranch mix, and milk. Pour over tater tot mixture.
  • **Cover and refrigerate at this point if baking later.**
  • Bake for 50 – 60 minutes, or until eggs are set.

Notes:

Can substitute turkey bacon.
Can make casserole in advance and refrigerate or freeze for later.
To bake after freezing, thaw completely and bake as directed above.
To reheat after freezing, thaw completely. Cover with aluminum foil and bake at 350ºF for 30 to 40 minutes.

  2. Great recipe!!! My question is…Does anyone have any issues with the bottom burning on the crust? I use a stub black cast iron bottom pot. Just wondering if the cream enamel cast iron doest do that?

    1. You can certainly experiment with more liquid in the recipe. Please note, that you may need to increase the cooking time. Leftovers are great frozen.

  4. How many servings is this? I’m cooking this for Christmas as our main dish with 9-10 people and am curious if I would need to add an additional half or double it.

  5. I made this for a pot luck breakfast event at my office and it was a hit! I used 2 and a half pounds of bacon, and picked up the spicy Hidden Valley Ranch dressing by mistake. It didn't matter a bit because it was absolutely delicious…this is going to be one of my "go to" breakfast recipes from here on out!
