Pin This RecipeI was looking through my “crack” recipes and noticed that I was missing a Cracked Out Breakfast Casserole. I had to fix this oversight ASAP! I am on a tater tot kick lately, so I decided to make a Cracked Out Tater Tot Breakfast Casserole. OMG! SO good! SOOOO good!
This is seriously one of the best breakfast casseroles I’ve ever made. Cheddar, bacon, ranch and tater tots – how could it be bad?!?! The best part about this casserole is that it can be made ahead of time and refrigerated or frozen for later. I LOVE make ahead meals!!
This recipe uses two pounds of bacon. If you want to cut down on the calories, feel free to use turkey bacon. This Cracked Out Tater Tot Breakfast Casserole is great for breakfast, lunch or dinner. It is the perfect dish for overnight guests or a party. We’ve made this several times and everyone asks for the recipe!!
Cracked Out Tater Tot Breakfast Casserole
Ingredients:
- 2 lb bacon
- 1 (30-32oz) bag frozen tater tots
- 1 (1-oz ) package ranch dressing mix
- 2 cups shredded cheddar cheese
- 8 large eggs
- 2 cups milk
Instructions:
- Preheat oven to 350ºF degrees. Lightly spray a 9×13-inch baking dish with cooking spray.
- In a large skillet, cook bacon. Chop the cooked bacon into pieces.
- In a large bowl, toss together tater tots, cooked bacon, and cheeses. Pour into prepared baking dish.
- Whisk together eggs, Ranch mix, and milk. Pour over tater tot mixture.
- **Cover and refrigerate at this point if baking later.**
- Bake for 50 – 60 minutes, or until eggs are set.

This is a wonderful recipe! But, I’ve got vegetarians in the family. Will the ratios still work if I make it without the bacon?

I’ve never made this in muffin tins, so I can not say how to do that.
This is a family favorite and has become our tradition in Christmas morning! I always use Hormel Real Bacon pieces instead of taking the time to make the bacon. Super easy and tasty recipe!
The ONLY thing I changed was that I used some cubed ham I had that I needed to use up. This was YUMMY! Made a lot, ate 2 meals then froze the rest for some yummy goodness in the not-so-distant future!
If freezing do you bake first then freeze or just freeze uncooked?

This was delicious! I added some sauteed onions to the bacon drippings after I cooked the 2 lbs of bacon ( which was perfect amount!) . Added the onions to the egg mixture. So good! Nice I had all the ingredients on hand too! Little dots of sriracha on the plate to smear with the casserole if you want. 🙂 A definitely go to for Brunch meal!
Do you mix the tater tots in from frozen ? I want to make the day before and refrigerate.

I’m making this dish the night before and refrigerating. To reheat can I place it back in the oven to bake and if so for how long?
We make this every year for Christmas morning. My kids look forward to it every time! We use 1lb bacon and 1lb sausage to add more filling protein. The pan goes so fast. If its not gone by xmas morning, its gone by Xmas night lol
Does anyone know how to turn this into a crock pot recipe? Specifically how long and high or low temp?
What if I skip the Ranch seasoning?
Going to make this for a group on a weekend trip, will this hold up if I make and bake it Thursday evening and reheat Sat morning? And if I do that do you have any suggestions on reheat temp and time.

I’ve made this many times for work and special events. Just marvelous. I do bake and crisp the tater tots before placing them n the pan. My people love it. I have teammates/remote workers driving in 90 miles when I announce that I am bringing this in. I do add more cheese and add sausage. It is a heart attack on a plate, but, you only live once!
Do you use 2 lbs of bacon? Neither the video or finished product look like there are 2 lbs of bacon.
I did. Use as much as you want.

Do you think I could use another form of “hash browns” shredded for example?

My family loves this recipe! We do it with both sausage and bacon in the same dish. Had to make a double batch for a large family breakfast and everyone wanted seconds!
I never have ranch seasoning, but we always have ranch dressing so I subbed 1/2c of milk with the dressing. Used 1 lb of bacon and it was just right. Had a mix of cheeses so I just threw them all in. And, in a feeble effort to make this a “full meal”, I chopped some spinach and threw it in too. There were no leftovers.
