Pin This RecipeHam and Cheese Hash Brown Casserole is a new favorite in our house. I made this for lunch. Chicken Legs took one bite and said “Hey! This is really good!”. He could not stop eating this! I can see why, it is crazy good! Hash browns, ham, parmesan cheese, cheddar cheese, cream of potato soup, and sour cream. YUM!
This casserole is different from our usual potato casseroles because it uses Cream of Potato soup instead of Cream of Chicken soup. It made the casserole super creamy and delicious! I used freshly grated parmesan cheese, but you can certainly use the canned grated cheese if that is what you have in the fridge.
This casserole can be made ahead of time and refrigerated or frozen for later. This is great for breakfast, lunch or dinner. You can omit the ham if you want to serve this as a side dish. I like to split the casserole into two foil pans and bake one now and freeze one for later.

Ham and Cheese Hash Brown Casserole
Ingredients:
- 1 (32-oz) package frozen hash brown potatoes
- 1 pound cooked diced ham
- 2 (10.5-oz) cans Cream of Potato soup
- 1 (16-oz) container sour cream
- 2 cups shredded cheddar cheese
- 1½ cups grated Parmesan cheese
Instructions:
- Preheat oven to 375ºF. Lightly grease a 9×13 inch baking dish with cooking spray.
- In a large bowl, mix together hash browns, ham, cream of potato soup, sour cream, and cheddar cheese. Spread into prepared pan. Sprinkle with Parmesan cheese.
- Bake uncovered 1 hour , or until bubbly and lightly brown.

I made this for an office breakfast potluck and it was a huge hit! The casserole had such wonderful flavor. I added green chile because being from New Mexico, we add green chile to everything. The chile gave it another depth of flavor and a little kick.
I have made this several times now and it is fabulous….my go to breakfast casserole for sure.

This sounds like the perfect Christmas breakfast casserole. Have you, or could you add eggs to the casserole to make a complete breakfast meal with this? That would make it really simple.

Grated but i bet you could use either kind.
I make one just like this, the only difference is that I use cream of mushroom soup….yum!

I made this the other night and it was DELICIOUS!! The only thing I did differently (by accident) was add the parmesan cheese in with everything else and it was amazing!! This tastes like the Cracker Barrel Hashbrown Casserole, but better 🙂 Wonderful recipe that's easy and the make-ahead option is such a plus!!

No, I actually threw the potatoes in frozen and the dish came out perfectly fine!
