Ham and Cheese Hash Brown Casserole is a new favorite in our house. I made this for lunch. Chicken Legs took one bite and said “Hey! This is really good!”. He could not stop eating this! I can see why, it is crazy good! Hash browns, ham, parmesan cheese, cheddar cheese, cream of potato soup, and sour cream. YUM!

This casserole is different from our usual potato casseroles because it uses Cream of Potato soup instead of Cream of Chicken soup. It made the casserole super creamy and delicious! I used freshly grated parmesan cheese, but you can certainly use the canned grated cheese if that is what you have in the fridge. 

This casserole can be made ahead of time and refrigerated or frozen for later. This is great for breakfast, lunch or dinner. You can omit the ham if you want to serve this as a side dish. I like to split the casserole into two foil pans and bake one now and freeze one for later.

Instructions:

  • Preheat oven to 375ºF. Lightly grease a 9×13 inch baking dish with cooking spray.
  • In a large bowl, mix together hash browns, ham, cream of potato soup, sour cream, and cheddar cheese. Spread into prepared pan. Sprinkle with Parmesan cheese.
  • Bake uncovered 1 hour , or until bubbly and lightly brown.

Notes:

Can make in advance and refrigeate or freeze for later.
To bake after freezing, thaw completely and bake as directed above.

  1. I made this casserole as written before and loved it. I made it again with a few changes. I fried my Hash Browns because I think they have more flavor that way. I also used 1 Cup Sour Cream and 1 Cup of French Onion Dip. Delicious!

      1. So there is no seasoning in this, no salt or pepper. Is the cheese,soups and ham enough for flavor?

      2. I obviously think so, since that is how I made it. Any changes to the recipe would be up to you.

    1. Same temperature and you will just have to play with the cooking time. I always thaw the casserole before baking.

  3. I made it tonight. I used left over Christmas ham I had in the freezer. The casserole was good, would have been better if my ham hadn't been so sweet.

    1. I made this. The only substitution I made was cream of mushroom instead of potato. After baking it, I ate about a cup’s worth and left the remainder in the casserole dish on the oven. I left for 2 hours and my 2 teenage sons devoured it! It’s one of the easiest dishes to make with such a great flavor. It will become a staple in our house….it’s that good! A family favorite for sure!!

  4. I would like to bring this dish to a family breakfast, would it be okay to bake the dish for 30 min. at my house and then finish the remaining 30 min. at their house?

  5. I just made 1/4 of this recipe for myself in the airfryer. I don’t care for canned soups, so I just made an equivalent amount of white sauce from 1 tablespoon of butter, 1 tablespoon of flour, and half a cup of milk with some salt pepper at it. It only took 25 minutes at 350° in the air fryer. Delicious!

  6. I made this for an office breakfast potluck and it was a huge hit! The casserole had such wonderful flavor. I added green chile because being from New Mexico, we add green chile to everything. The chile gave it another depth of flavor and a little kick.
