How To Make Ham & Cheese Crescent Breakfast Casserole
This Ham & Cheese Crescent Breakfast Casserole is easy to make. Start with making the ham and cheese filling. Combine ham, cheese, cream cheese, Worcestershire sauce, dijon mustard, and brown sugar. Next, open the cans of crescent rolls and cut them in half, making two triangles. Top each triangle with a heaping scoop of the ham mixture. Place crescent rolls into a baking dish. Sprinkle rolls with poppy seeds. Whisk together eggs and milk. Pour the egg mixture over the rolls and bake.
I find it easier to cut the crescent rolls in half with a pizza cutter. I like to use a small cookie scoop to scoop the ham mixture onto the crescent rolls.
You can make the ham filling ahead of time and refrigerate until ready to assemble the casserole.
Can This Breakfast Casserole Be Frozen?
You can definitely make this casserole ahead of time and refrigerate overnight or freeze for later. You can freeze the casserole baked or unbaked. To bake the casserole after freezing, thaw completely and bake as directed below. To reheat the baked casserole, thaw completely and either reheat in the microwave or covered in the oven for about 30 minutes.

Ham & Cheese Crescent Breakfast Casserole
Ingredients:
- 16- oz cooked ham chopped
- ¾ cup shredded cheddar cheese
- ¾ cup shredded swiss cheese
- 8- oz cream cheese softened
- 1 Tbsp dijon mustard
- 1 Tbsp Worcestershire sauce
- 1 Tbsp brown sugar
- ¼ tsp onion powder
- 1 (8-count) can refrigerated crescent rolls
- 1 (4-count) can refrigerated crescent rolls
- 1 Tbsp poppy seeds
- 5 eggs
- 1½ cups milk
Instructions:
- Preheat oven to 350ºF. Spray a 9×13-inch baking dish with cooking spray.
- Mix together ham, cheddar, swiss, cream cheese, dijon mustard, Worcestershire, brown sugar, and onion powder.
- Separate crescent rolls into 12 triangles. Cut each triangle in half, forming two triangles. (24 total) Scoop one tablespoon of ham mixture on the long end of each triangle. Roll up crescents and place in baking dish. Sprinkle tops of crescents with poppy seeds.
- Whisk together eggs, and milk. Pour over crescent rolls.
- Bake for 30 to 40 minutes, until egg mixture, is set.

It was so good. It called for a cup and a half of milk I think one cup would be perfect! This was and is one of my most favorite meals from now on!!
Oh my goodness! This is amazing! I have lots of go-to breakfast dishes, but this has been moved to the top!
I did not have any Dijon Mustard so I subbed with Honey Mustard!
I think the rolls cooked by themselves (w/o egg) would make great appetizers also!
I had leftover mixture that we will use as a dip with crackers for a snack!

My Friday morning prayer breakfast guys devoured this recipe! They poured many compliments to the cook! I could tell when putting this together it was going to be good and I wasn’t disappointed! I used two 8-count tubes of crescent rolls and didn’t cut them in half because I found that too tedious! It all worked fine in the 9×13” pan. Best breakfast recipe I’ve made in while!
This recipe takes some time but it’s worth it. Always looking for recipes that are not super egg heavy and don’t have a ton of cream or soups of anything. I used both whole crescent rolls and used a bigger pan and an extra egg. I also used half bacon cause I thought I had more ham then I actually did. Still very good!
