This Ham & Cheese Hash Brown Breakfast Casserole is a new favorite at our house. Hash browns, ham, parmesan cheese, cheddar cheese, potato soup, sour cream, eggs, and milk. My favorite part of the whole dish is the parmesan cheese topping. YUM! Even though I named it a breakfast casserole, it is great any time of day. We usually eat it for lunch or dinner. Leftovers are great too!
How to Make Ham & Cheese Hash Brown Breakfast Casserole
This casserole is super easy to make. Basically just mix everything together in a giant bowl, spread into a deep dish baking dish and bake. There is no need to fully thaw the shredded hash browns before making the casserole. I let the hash browns sit on the counter for about 10 minutes before I start assembling the casserole.
I used freshly grated parmesan cheese in this recipe. If you don’t have fresh parmesan, the stuff in the green can will work just fine. It just might not look like my photos.
Can Hash Brown Breakfast Casserole be Frozen?
You can make this casserole in advance and refrigerate overnight or freeze for later. If baking the casserole directly from the refrigerator, you may need to add a few minutes to the cooking time. To bake the casserole after freezing, thaw completely in the refrigerate and bake as directed below.
What to Serve with Egg, Ham & Cheese Casserole
This makes a lot of food. It is a great dish for a potluck, baby shower, overnight guests, and holiday mornings. Since there are only two of us at our house, I usually split the hash brown mixture between two pans. I bake one and freeze the other one unbaked for later.

Ham and Cheese Hash Brown Breakfast Casserole
Ingredients:
- 1 (32-oz) package frozen hash brown potatoes
- 1 pound cooked diced ham
- 2 (10.5-oz) cans condensed cream of potato soup
- 1 (16-oz) container sour cream
- 2 cups shredded sharp Cheddar cheese
- 6 eggs
- 1½ cups milk
- 1½ cups grated Parmesan cheese
Instructions:
- Preheat oven to 375ºF. Lightly grease a deep dish 9×13 inch baking dish with cooking spray.
- In a large bowl, mix together hash browns, ham, cream of potato soup, sour cream, and cheddar cheese.
- Whisk together eggs and milk. Mix into hash brown mixture.
- Spread ham, egg, and potato mixture into prepared pan. Sprinkle with Parmesan cheese.
- Bake uncovered 1 hour, or until eggs are set.
