This is one of the best breakfast casseroles that we’ve made. It has all the flavors of an Egg McMuffin in casserole form. This casserole is assembled in minutes the night before and baked when you are ready. Chicken Legs loved this. He wanted me to contact McDonald’s and get them to add it to their menu! I agreed that this was great. I am not a fan of McMuffins, but I loved this casserole. Chicken Legs added syrup to his second piece to make this a McGriddle Casserole.
How to Make McMuffin Breakfast Casserole
This casserole is super easy to make. Start with cutting some english muffins and canadian bacon into pieces. Layer half of the muffins, bacon, and cheese in a baking dish. Repeat the layers. Whisk together eggs, milk, salt, and pepper. Pour the egg mixture over the muffins. Cover the casserole with plastic wrap and refrigerate overnight. Bake the casserole the next morning.
- I used Bays English Muffins – my favorite. They are found in the refrigerated section of the grocery store, near the milk.
- Do I have to refrigerate this casserole overnight? No. If you are short on time you can make this and refrigerate it as long as possible or not at all. Refrigerating the casserole overnight helps soften the english muffins.
- Can I freeze McMuffin Casserole? Yes! You can assemble the casserole and freeze it unbaked for later. When you are ready to bake it, thaw it out completely in the refrigerator and bake as directed.
- Do I have to use Candian bacon? No. You can use ham, bacon or sausage if you prefer.
- Can I double the recipe? Yes! You can easily double the recipe and bake it in a 9×13-inch dish. You may need to increase the baking time 5 or 10 minutes.

As I said, this casserole is a favorite at our house. I always have the ingredients on hand to make it. We love this any time of the day – breakfast, lunch, and dinner. It is great for potlucks, overnight guests, and holiday mornings. We usually serve this casserole with some grits and fresh fruit. McMuffin Casserole
Ingredients:
Instructions:
- Grease an 8-inch square baking dish.
- Cube English muffins and chop Canadian bacon.
- Add half of the cubed English muffins in a single layer. Top with half of the Canadian bacon and ½ cup of the cheese. Layer the remaining English muffins and Canadian bacon and ½ cup more cheese.
- Whisk together the eggs, milk, salt, and pepper in a medium bowl until combined. Pour the egg mixture evenly over the casserole.
- Wrap the baking dish with plastic wrap and place refrigerate for at least 1 hour, or up to 1 day.
- Bake at 325ºF for 45 to 50 minutes.

I have yet to make any of your recipes I pin (which a good portion of my food board is!) but I love Egg McMuffins & am rarely up and out of the house in time to get them, so this will definitely have to be a recipe to try soon!
