Easy Chicken & Pasta Casserole

This Overnight Million Dollar Chicken Pasta is on repeat in our house. It is SO good! We can not get enough of this easy chicken casserole. We LOVED all the flavors in this casserole. Creamy chicken pasta loaded with four types of cheeses. The best part about this recipe is that you don’t have to boil the pasta before making it! Perfect for busy weeknights. Add this to your menu ASAP!

How to Make Overnight Million Dollar Chicken Pasta

This chicken pasta casserole is very easy to make. In a large bowl, whisk together chicken broth, milk, cream of chicken soup, cream of mushroom soup, sour cream, cottage cheese, cream cheese, and seasonings. Stir in the cooked chopped chicken and pasta. Pour the mixture into a lightly greased baking dish. Cover this dish with plastic wrap or aluminum foil and refrigerate overnight. It will be ready to bake the next day for lunch or dinner.

  • Do NOT cook the noodles ahead of time. Add them to the casserole dry/uncooked. They will absorb some of the liquid in the casserole dish as it sits overnight. They will finish cooking in the oven along with the rest of the casserole. 
  • I used rotisserie chicken in this dish. It is my number one timesaver. We always have some pulled rotisserie chicken in the freezer for quick meal prep. It makes preparing casseroles like this a breeze!
  • You can use any combination of cream of soups in this casserole. Cream of chicken, mushroom, or celery is all good.

What to Serve with Baked Chicken Pasta

This pasta casserole was a HUGE hit at our house. This makes a lot of food. It is great for a potluck or a crowd. Leftovers are great reheated.

We like to serve this with some green beans and rolls. OMG! I am getting hungry just thinking about this meal! You have to make this! Go to the store and get the stuff to make it tonight! Your family will thank you tomorrow.

Ingredients:

Instructions:

  • Spray a 9×13-inch pan with cooking spray.
  • In a large bowl whisk together cottage cheese, sour cream, cream cheese, cream of chicken soup, cream of mushroom soup, milk, chicken broth, onion powder, and garlic powder. Stir in cooked chicken and uncooked pasta.
  • Pour pasta mixture into prepared pan. Cover and refrigerate overnight.
  • Remove casserole from refrigerator and uncover.
  • Preheat oven to 350ºF.
  • Top casserole with grated parmesan and shredded mozzarella cheese. Bake, uncovered, for 1 hour.

  • I suggest using Unsalted Cream of Chicken & Mushroom Soups in this dish to control the sodium.
  • You want the cream cheese to be very soft so it gets fully incorporated into the casserole. Microwave the cream cheese for 15 to 20 seconds if you are short on time.

  5. I don’t like the rotisserie chicken in the store. I just don’t trust that it’s fresh, can you use raw chicken.

      1. Not fond of cottage cheese either. However, in this recipe that small amount of cottage cheese blends into the flavor. It does not have the taste you would get straight up from the container. I used small curds. I Did not tell others in my family who detest cottage cheese the recipe contains it, no one noticed it and everyone loved it. I also added Boursin Cheese, I subbed Tastefully Simple Garlic Garlic & Onion Onion for the powders, and used Penne pasta. Wonderful, quick and easy meal. Serve with a tossed salad and home made garlic bread. Yum!!!!

    1. Generally 8 ounces of short pasta (like macaroni) is about 2 cups. Having said all that, what’s generally listed on the packages/boxes of most dry pasta as the serving size is 2 ounces.
