This casserole is very easy to make with only a few simple ingredients. Bring a large pot of water to a boil over medium-high heat. Cook a package of wide egg noodles according to the package instructions for al dente. Drain the noodles and set aside.
In a large bowl, stir together cream of chicken soup, sour cream, poppy seeds, onion powder, and garlic powder. Add cooked chopped chicken and cooked noodles. Stir to combine. Season with salt and black pepper to taste.
Spread the chicken mixture into a baking dish that has been sprayed with nonstick cooking spray. In a small bowl, combine crushed Ritz crackers and melted butter. Sprinkle cracker crumbs over the top of the casserole. Bake in a preheated oven until hot and bubbly.

I can’t wait to try this with the noodles. I’ve made the poppyseed chicken and placed it on top of chicken flavor rice-a-roni, added the cracker topping and baked it. Noodles would be a nice change of pace.
