How to Make Rotel Cream Cheese Sausage Balls
These sausage balls are super easy to make with only 5 simple ingredients. In the bowl of an electric stand mixer, combine sausage, Bisquick, shredded cheese, and a can of Rotel diced tomatoes and green chiles. Use a cookie scoop, scoop the sausage mixture into balls, and place on a parchment-lined baking sheet. Bake in a preheated oven until golden brown. Garnish with parsley and serve with your favorite dipping sauce.

- If you don’t have a stand mixer, you can mix the sausage mixture by hand.
- I use Jimmy Dean hot sausage. Can use turkey sausage for a lower calorie option.
- Can use any flavor of Rotel tomatoes – Mild, Original, Hot, Chunky, or Mexican.
- The sausage mixture is sticky. Resist the urge to add more biscuit mix.
- Use a cookie scoop to scoop the sausage mixture into 1-inch balls.
- I use a Mexican cheese blend in this recipe. You can use any cheese that you prefer. Shredded cheddar cheese or pepper jack cheese are both delicious.
- Use gluten-free Bisquick for a gluten-free snack.
- Can Sausage Balls be made in advance? Yes! You can form the sausage mixture into balls and place in the fridge until ready to bake.
- Can Sausage Balls be frozen? Yes. Form the sausage mixture into balls and place on a parchment lined baking sheet. Place the baking sheet in the freezer and freeze. Transfer the frozen balls to a freezer bag.
- When ready to bake the sausage balls, place the frozen balls on a baking sheet and bake as directed adding a few minutes to the cooking time.
- There is no need to thaw the balls before baking.

As I said, these sausage balls are a favorite at our house. They taste great hot out of the oven or at room temperature. We like to dip them into salsa, our copycat Chuy’s Jalapeno Dip, or some queso. YUM! Whip up a batch ASAP!

Ingredients:
- 1 lb hot sausage, uncooked
- 1 (8-oz) package cream cheese, softened
- 1 (10-oz) can Rotel diced tomatoes and green chilies, drained
- 1½ cups Bisquick
- 2 cups shredded Mexican cheese blend
Instructions:
- Preheat oven to 400ºF.
- Place all ingredients in the bowl of an electric stand mixer fitted with the dough hook attachment. Mix until well combined.
- Scoop sausage mixture into 1-inch balls and place on a parchment paper-lined rimmed baking sheet.
- Bake for 18 – 20 minutes, or until brown.

Dang. Mine turned into patties. (I did drain the rotten)
try squeezing the rotel with paper towels. AND if you have a kitchen scale, 1 cup of Bisquick weighs 123 grams or 4 1/3 ounces.
I don’t want to buy a box of Bisquick for a one time use , will plain all purpose flour work ?
No, all-purpose flour and Bisquick are not the same thing.
I have made this recipe twice. Each time the balls turned into patties after cooking. Should I use more Bisquick?
Are you draining the Rotel? Try squeezing it with paper towels. You can add more Bisquick but don’t add too much or they will just taste like Bisquick.
