Sloppy Joe Casserole

This Sloppy Joe Cornbread Bake is a weeknight staple at our house. It is crazy good!! We could not stop eating this yummy casserole. Sweet cornbread topped with sloppy joe meat and cheese. I mean, what’s not to love? I’m not even a big fan of sloppy joes and I gobbled this up! We ate this for dinner and finished off the leftovers for lunch.

How to Make Sloppy Joe Cornbread Casserole

This casserole is SUPER easy to make. Start with making the cornbread base. Mix together Jiffy mix cornbread, creamed corn, eggs, milk, and a little cheese. Pop that in the oven to partially bake and prepare the sloppy joe meat. I browned some ground beef and used a can of Manwich sloppy joe sauce. Remove the cornbread from the oven. Top with the sloppy joe meat and cheese. Place the pan back in the oven and bake until the cornbread is done.

You can assemble this casserole up to the point of spreading the sloppy joe meat on the partially baked cornbread and freeze it for later. To bake the casserole after freezing, thaw completely and bake at 400ºF for about 30 minutes until the cornbread is fully baked. Freezer meals are such a timesaver!

You can also freeze any leftovers for a quick meal later. To reheat leftovers, thaw completely and heat until warm in the microwave or oven.

Sloppy Joe Cornbread Bake – comfort food at its best! Sweet cornbread crust topped with sloppy joe meat, and cheese. A weeknight favorite. Everyone always cleans their plate! Jiffy mix, creamed corn, eggs, milk, cheese, ground beef, and Manwich sloppy joe sauce. Super easy to make and tastes great!

Ingredients:

  • 1 (8.5oz) pkg cornbread mix
  • 1 (14.75-oz) can creamed corn
  • 2 eggs
  • ½ cup milk
  • 2 cups shredded cheddar cheese, divided
  • lb ground beef
  • 1 (15-oz) can Manwich sloppy joe sauce

Instructions:

  • Preheat oven to 400ºF. Coat a 13 x 9 x 2-inch baking dish with nonstick cooking spray. Set aside.
  • In a large bowl, combine muffin mix, corn, eggs, milk, and 1 cup of the cheese. Pour into prepared baking dish. Bake for 20 minutes.
  • In a large skillet over medium heat, cook ground beef until no longer pink. Drain fat. Add sloppy joe sauce. Cook for an additional 5 minutes.
  • Spread beef mixture over cornbread and top with remaining cup of cheese. Bake for and 20 additional minutes.
  • Allow to cool for 5 to 10 minutes and cut into squares.

Notes:

Can substitute ground turkey for ground beef.
I used a box of Jiffy Mix cornbread mix.
Can freeze partially baked casserole for a quick meal later. Prepare through Step 4 and freeze instead of baking. To finish baking the casserole after freezing, thaw and bake at 400ºF for 30 minutes, until cornbread is baked.

  1. Wow, this was yummy and so easy to make! I used bold manwich and added 1tablespoon each of sherry and roasted green chilies to the meat. I also melted the cheese for 9 minutes instead of 20 (I checked it a couple of times and the cheese was perfectly browned in 9 minutes in my oven) Not only will I make this again, I am adding it to my RV/camping recipes.   2. This was really yummy! My daughter and husband enjoyed it and it was a super easy weeknight meal. We will make it again and the only change I will make is to put the cheese on top in the last five minutes of baking. Twenty minutes is far too long for the cheese topping to bake.

  3. Made it just as written, but used one cup cheddar cheese in the cornbead and 1 cup pepper jack cheese on top. Turned out great and got a thumbs up from my kinda picky significant other. He says this recipe is a keeper! I love easy and delicious dinners!

    1. Maybe cook it a little longer next time? The cornbread will not be crispy, but it should be firm. All ovens are different, so maybe yours cooks slower than mine.

  4. Only had frozen corn, so I upped the milk 1/4c. I also made my own sloppy joe as I had no Manwich. Got a bit carried away with the brown sugar, but hubby loved it (and never ever comments!) Am making this again tonight and will slice some tomatoes to go over the Manwich before I add the cheese. Might also toss in some green beans this time.

  6. It was good but a little to sweet for me. I think I would do just a reg sloppy Joe other than Man witch so it’s not a sweet.

  7. I like to change manwitch to 2 cans chili and cooked ground beef, do the rest the same. Love recipes you can make a few adjustments to make your own.

    1. You will have to replace it with something. The liquid is needed in the cornbread. You will just have to play with the recipe.
