Pin This RecipeThis Southwestern Squash Casserole is a new favorite in our house. Squash, onions, peppers, salsa, and cheese. All of our favorite flavors in one dish. YUM! We ate this a couple of days in a row and it was delicious every single time.
How to Make Squash Casserole with Salsa
This casserole is super easy to make. Start with slicing some yellow squash. Combine squash, cheese, onion, green chiles and jalapeños. Sprinkle with flour, cumin and salt. Toss together and spread into a baking dish. Top with salsa and more cheese. Pop the casserole in the oven and bake. Garnish the casserole with chopped red and green onions.
- I used yellow squash in this dish. This would also be great with half squash, half zucchini.
- Can I make squash casserole in advance? Sure! You can assemble the casserole ahead of time and refrigerate until ready to bake.
- My favorite store-bought salsas are Mateo’s and Kylito’s Salsa. I buy both at Walmart.
- Can use homemade salsa. Here is our favorite recipe: https://www.plainchicken.com/superior-grill-salsa/
- I used cheddar cheese. This is also delicious with a Mexican cheese blend or pepper jack cheese.
- Is Southwestern Squash Casserole spicy? This casserole does have a little kick from the jalapeños, and salsa. You can substitute green chiles for the jalapeños and mild salsa if you are worried about the heat.
What to Serve with Squash Casserole
This recipe makes a ton. It is great for a summer cookout. This goes great with the Taco Ranch Chicken I shared earlier this week. It is also great with steak and pork. Southwestern Squash Casserole
Equipment:
Ingredients:
- 7 medium yellow squash, sliced
- 2½ cups shredded cheddar cheese, divided
- 1 medium sweet onion, chopped
- 1 (4-oz) can diced green chiles, undrained
- 1 (4-oz) can diced jalapeños, drained
- ¼ cup all-purpose flour
- ½ tsp cumin
- ½ tsp salt
- ¾ cup salsa
- 4 green onions, sliced
- ¼ cup chopped red onion
Instructions:
- Preheat oven to 400ºF. Lightly spray a 9×13-inch pan with cooking spray. Set aside.
- In a large bowl, combine squash, 1 cup cheese, onion, green chiles and jalapeños. Sprinkle with flour, cumin and salt. Toss to combine.
- Transfer squash mixture to prepared pan.
- Bake, covered, for 30 to 40 minutes. Remove from oven and top with salsa and remaining 1½ cups cheese.
- Bake uncovered for an additional 10 to 15 minutes. Top with green and red onions before serving.

Do you need to cook the squash first?
Do you think I could use cooked spaghetti squash instead of regular yellow squash?
I have not made this recipe with spaghetti squash, so I can't say with certainty how it would taste. You can certainly give it a try!
IT was delicious. I made it using another commenters suggestion of adding taco meat. Since our squash we pick is fairly small I was unsure of the quantity, so I just saw how much would fill my dish. I think next time I will sauté onions and garlic and our jalapeño peppers.
Do you think I could prepare all of the ingredients in a tin and freeze to bake later?
