Grilled Coca-Cola Chicken


I got on a 7UP kick earlier this year.  I made chicken, biscuits and a pound cake!  I didn't want Coke to feel left out, so I found this recipe for Coca-Cola Chicken over on Jamie Cooks It Up and gave it a try.  It was yummy!    

The marinade was super simple to throw together.  I almost always marinate my chicken overnight.  I just find it is easier to mix it up and throw it in the fridge before I go to bed so I don't have to worry about prepping dinner in the morning.  I cut the recipe below in half since we were only cooking two chicken breasts.  I have plans for a BBQ sauce and cake with Coke in the future.

Grilled Coca-Cola Chicken

2 C (16 oz) Coke
1/3 C soy sauce
1 T minced garlic
1/2 C brown sugar
1 T balsamic vinegar
1 T lime juice
6 chicken breasts

Combine all ingredients but the chicken in a medium sized bowl. Stir to incorporate well.  Place chicken in a large gallon sized Ziploc bag. Pour marinade over the chicken. Seal tightly and store in the fridge for 4-24 hours.  Discard marinade and grill until cooked through.

  1. Sounds like a wonderful recipe. I'll be sure to try this one. I have discovered (probably been there all the time) boneless, skinless chicken thighs. They are so easy to cook. Did some last night, just pounded them out flat like a breast, double battered with egg and flour and fried. Was delicious. Love your blog. Try to read it everyday. Hope you have a blessed day.

  5. What a handsome piece of chicken. I may have to make that for dinner!

    That marinade looked familiar, then I realized I have a similar recipe that calls for Sprite or Seven Up. It's made in the Crockpot so the chicken slow cookes in the sweet sauce. It's good, but yours looks better.

  9. I make something very similar with 7 up! It's a Filipino marinade. Good to know it works with Coke too!
